When it comes to dinner in my house, we don't really menu plan a whole lot. I kinda have an idea for what we will eat that week and I'll buy all the groceries for what I have in mind but what we eat each night is kinda figured out as we go along. I'll throw out the options to everyone and then we all kinda say yay or nay for that night. But, in general, I keep weeknight meals fuss free. I like meals that don't require a bunch of ingredients or that make a bunch of dishes to wash later.
We are in the thick of summer and turning on the oven also means heating up the house. So the fact that I can make a meal without turning on the oven is a huge bonus. And it only has 5 ingredients - yes! It's something just a bit different than my usual weeknight meals. But it was different without being too weird or off the wall and it also uses easy-to-find ingredients. And let me tell ya, I loved it!
1 lb. ground beef
2-1/2 cups water
2 (3 oz.) pkgs. beef-flavor ramen noodles (with seasoning packets)
1/2 cup stir fry sauce
1 (16 oz.) bag frozen stir fry vegetables
Keep the packets that are included with the ramen noodles. You'll need those in a bit.
Brown beef in a large skillet over medium heat; drain grease.
Stir in beef flavor seasoning packets.
Add in sauce and frozen stir-fry vegetables.
Stir and bring to a boil.
Reduce heat to medium-low; cover and cook, stirring occasionally, for 5 minutes, or until vegetables are crisp-tender. Then break up the ramen noodles and add them to the skillet. Stir well.
Then cover and cook, stirring occasionally, 5 to 8 minutes, until sauce is thickened and noodles are tender.
Note: For those of you with salt or sodium sensitivities, you can replace the beef packets and water in this recipe with low sodium beef broth.Enjoy!
