BBQ Biscuit Cups

I've got a really fun and easy recipe for ya today. I just love recipes like this because they are easy to play around with but are perfect for busy evenings. This recipe can definitely be tailored to your family's tastebuds. If you don't have or want to use ground beef in this, you can use ground turkey or ground chicken. Shredded chicken would also be wonderful. Or, if you don't like the idea of BBQ sauce, why not make these into Sloppy Joe or Taco Cups. Instead of BBQ Sauce, try using a can of sloppy joe or a packet of taco seasoning (just follow directions on the back of the packet). Lots of options here. But it sure is tasty and filling!
1 pound ground beef
3/4 cup barbecue sauce
1 tbsp. dry minced onion
1 (12oz.) tube refrigerated biscuits (see notes below)
1 cup shredded cheddar cheese
Preheat oven to 400F degrees. Spray muffin tin with nonstick cooking spray. In a large pan, brown and crumble ground beef. Turn off heat.
Drain excess grease.
Put beef back in pan and add in BBQ sauce and dried minced onion.
 Stir well.
Separate biscuits and place into greased muffin tins. Press dough up and along sides of muffin tins.
Divide meat mixture between muffins (you may have just a small amount leftover).
Sprinkle each one with shredded cheddar cheese.
Bake for 10-12 minutes until biscuits are golden brown and cheese is melted.
Serve with a fresh garden salad or fries.
Cook's Notes: Make sure you are purchasing the regular-sized biscuits. There should be 10 biscuits per tube. Don't use the larger Grands biscuits with these unless you are planning on cutting them in half before using.

  11. What a blast from the past! I used to make these when my kids were young and I'd forgotten all about them. They'll be perfect for Thursday afternoon cooking with my 4 year old grandson. Thanks for jogging my memory with an old favorite!

  12. Many Many KUDOS to using Sweet Baby Rays sauce. My boss IS Sweet Baby Ray! (no joke!)

  13. Every time I see an American recipe for refrigerated biscuits I just groan. Can you believe they don't exist here? Nothing close even.

I do love this idea! They look terrific.

  14. Thanks for a great lunch idea! We loved it and did a chicken Tex-Mex version. I posted mine at

  15. Love this idea. It just boggles my mind how inventive people are. Of course I have all those ingredients but do you think I could have come up with that??? I need to start thinking out of the box.

  16. This was perfect! Yesterday we had sloppy joes for supper and today (with the addition of bbq sauce) the leftovers morphed into bbq cups. Love, love, love this recipe.
Would it be wrong to have taco cups tomorrow lol? I'm drooling over the thought of them topped with crushed tortilla chips, sour cream and salsa.

  17. I made this tonight, but I used a can of hormel chili instead of the BBQ ground beef, because my and my SO aren't fans of BBQ. It turned out wonderful!! This will definitely become a regular menu item in our house. Thanks for the awesome recipe!

  18. I make something similar to this - use premade pizza dough and I fill with sliced up deli turkey meat, bbq sauce, sliced up spinach and cheese on top. They're delicious and a great kid treat!

  19. These look yummy and can't wait to try but can you tell me you said you use regular size biscuits yet you have in the picture grands jr. Ar the grands jr and the regular size about the same? Thanks! I think my husband and I will love these!

  20. Sorry for the confusion. Basically you don't want the pillsbury Grands biscuits. You would use the Jr. or if you are using another brand, you want to make sure they are your average size biscuits. Hope that helps clarify!

  21. These are so tasty and simple. I already had the grands biscuits on hand, so I just cut them in half and made 12 cups. Even my two pickiest eaters gobbled them up!
