I have been telling everyone on facebook that I have been in a soup sort of mood lately.
The weather is nowhere near cool by me right now but once the kids are back in school, my
mind just gradually turns to all things fall.
Football games, apple picking, hay rides and warm, comforting soup.
And this soup is definitely what I would call comfort soup. It takes one of my favorite foods and transforms it into a creamy, flavor-packed soup. This one got a thumbs up from my hubby and resident taste-tester, Gene.
Ingredients:
2 cups potatoes, peeled and cubed
2 carrots, peeled and grated
1 small onion, chopped
1 clove garlic, minced
1 1/2 cups water
1 tablespoon beef bouillon granules (about 4 cubes)
1/2 teaspoon salt
1 pound ground beef, browned and drained
2 1/2 cups milk, divided
3 tablespoons all-purpose flour
8 oz. Velveeta, cubed
Optional: 1/4 to 1 tsp. cayenne pepper
Garnish: 1/2 lb. bacon, crisply cooked and crumbled
Serves 6 to 8




It's funny, my favorite home-cooked recipe was not my favorite when I was little, but now that I am grown up it takes me right back to memories of my mom. She passed away 2 years ago this month and so it is all the more valuable to me for that reason. It had no name when I was growing up but a few years back we decided to call it "man stew" because all the men we knew loved it. I still need to write it down because it is one of those "in your head" recipes. In fact I made it for my family this weekend and it didn't last very long! It brings back so many find memories of family meals at Grandma's and it a wonderful comfort food.

My favorite would be my best friend's mom's fried chicken dinner. It was the very best fried chicken I have EVER had. I think it was because SHE made it. It cannot be duplicated!

My favorite home cooked meal is Home Made Chicken Noodle soup made by my husband. He makes the best! Whenever anyone is sick, he makes his soup for us. He even made it up ahead of time one time before he had surgery so he could recoup on his soup!!1

My favorite home cooked meal has to be Homemade Chicken and Noodles. I remember my grandma making this whenever we had a family gathering. She would make the noodles by hand and I remember her rolling them out on a huge cutting board and cutting the noodles with the biggest butcher knife I had ever seen. She passed away over 20 years ago and I always think of her whenever I make this recipe.

ReplyDeleteNow that I've said that, I'd like to say what perfect timing this cheeseburger soup recipe is! We had a BBQ Saturday and we have about a dozen leftover burgers, about 8 oz. of leftover homemade Velveeta + Rotel queso and a couple of jalapenos still hanging on our plant in the garden. AND some leftover cooked bacon for our burgers.
Dinner tomorrow! I've stuff out for a Liberty Tree tavern pot roast tonight.
Oh, I've had a soup like that and it was incredible!!!! My favorite home-cooked meal is Thomas Keller's fried chicken. It's brined with lemons and all kinds of herbs then dunked in buttermilk and seasoned flour and fried up. It's the best fried chicken I've ever had! Kate@kateiscooking

When I was growing up my Polish/German/Russian Aunties fixed the cucumbers with cream and vinegar. We didn't have cream so Mom always made it with mayo and vinegar and that's how I make it...Love It!!
My very favorite meal is my moms chicken and dumplings. I have tried for years to make this but I don't even come close to my moms. She has been gone for a long time and I still miss her every day. She made her dumplings big and soooo fluffy they would melt in your mouth! Thank you for all of these great receipes. Mirlin

ReplyDeleteMy favorite meal was cooked by my grandmother and after church we all would gather over her house for the Sunday dinner. She would have cooked the Sunday dinner on Saturday evening and just heat it up what needed to be heated for after Church Sunday dinner. She cooked fried chicken, potato salad, sweet peas, homemade rolls, coconut cake and sweet tea. At times I will cook this for our Sunday dinner the way my grandmother did.

I actually have 2 home-cooked meals that I would call favorites. One was my Mother's Peppered Steak. It's been many years since I've had it as she passed away 29 years ago. A more current favorite is my mother-in-laws chicken chow mein. I have her recipe, but of course, when I fiz it, it never tastes the same.

My most favorite has got to be Hungarian Nockral. Or as our family calls them, Niffles. My Grandmother would make these, and I would eat til I was miserable! They are like drop dumplings, but not as airy. ReplyDeleteMy all time favorite homemade meal is my Mom's lasagna...it takes her ALL day to make it and she does everything from scratch and boy can you taste it in every bite...I recently turned 40 and for my 40th birthday she surprised me and made a huge pan of it with all the fixins on the side, fresh Italian salad and homemade rolls...it was to die for and I thoroughly enjoyed every bite! I am grateful to still have my Mom around to make this for me:)

ReplyDeleteMy all time favorite is one of three meats, meatloaf, roastbeef or turkey served with FF and gravy on both, fries and meat. Slaw was always the side. I was born in the fifties and had grandparents that loved to eat at roadside diners. I am now showing signs of this in my figure. Back then you got home cooked food at diners not frozen or fast order.

ReplyDeleteMy favorite homemade recipes was my mothers homemade stuffing balls. During the holidays everyone had some form of stuffing but mom would prepare hers and form them into balls and put them on a cookie sheet and put them in the oven. The outside would be crunchy and the inside warm and moist. I miss moms food, she passed away two years ago.

ReplyDeleteMy all-time favorite meal has to be my grandma's chicken and noodles. I used to watch her mix that dough up and roll it out, flour it and then dress for church on Sunday morning. She'd leave them drying on the dining room table while we were at church and when got back home, she'd roll them up and slice them and put them in with the chicken that had been cooked earlier that morning. She made pure egg noodles "her way", and no recipe I've ever found comes close to that taste and believe me, I think I've tried them all! She passed away about 30 years ago without giving me her recipe. When I asked her for it, she said there wasn't one....it was just stuff she threw together.

ReplyDeleteMy favorite all-time home cooked meal would have to be my mother's fried chicken with mashed potatoes, whatever vegetables that were around at the time, home-made biscuits, and pies (apple and pumpkin). My all-time favorite home cooked meal that I myself make is pot roast. I cook the pot roast separately from the potatoes because my grandson doesn't like the potatoes and carrots mixed in with the meat (he'll learn; he's only 13) and I mash the potatoes because that's the way he likes them. Then I fix corn as well as the carrots, 'cause neither of my grandchildren like carrots at this point.
Would love to win the cookbook; it sounds like it will be one of their best ever!

My favorite homecooked meal is my mom's "Sticky Chicken," rice and gravy, green/wax beans, biscuits, cucumbers in vinegar and peach kuchen for dessert. My mom first fries the very best fried chicken EVER. Then she makes her gravy (not milk gravy) and adds back several pieces into the gravy and lets it simmer until the crust of the chicken absorbs the gravy and becomes sticky. OMG. LITERALLY finger lickin' good. You cannot eat it without licking your fingers!

Well this was kind of tough, it my mother growing up wasn't much of a cook, she mostly just threw things together and called it some kind of casserole LOL but there was one thing that I liked it was her Peppered steak over rice! She probably only made it once a year so we really looked forward to it!!

I looked forward to it every year. Now I make it for my daughter as its her favorite meal too.

When I look at some of the recipes for chicken packets made in aluminum foil packets or the roasted potato packets it never fails to take me back to my mom's kitchen.
ReplyDeleteI remember all of us kids sitting at the kitchen table (a big wooden table my father finished) opening our chicken packets to put on our plates with a big spoonful of mayo.
Today I make those packets for my family - minus the big spoonful of mayo ....... because we all like them just the way they come out of the foil
I L-O-V-E going to my grandmas for family dinner. She makes the best fried chicken, homemade noodles, and dinner rolls bigger than the size of softballs that you've ever tasted!

My favorite home cooked meal was my Mom's home made bean soup, with home made biscuits. It was a thick soup, chock full of beans, carrots, onions and chunks of ham, and Mom served up warm,buttery biscuits to "dip" into the soup. Mom died a year ago last May and I never got her recipe. When I think of that soup, I think of cold fall days, filled with love and laughter and Mom.

My FAVORITE meal would be my Mom's homemade mac and cheese with ham and green onions. My second favorite is chicken in a basket (breakfast) made on Saturday mornings by my Dad. My husband and daughter loves my chicken and dumplings. I hope to one day pass on all of these recipes to my daughter for her children.

I have such happy memories of Sunday dinners. My mother would put a pot roast with potatoe's, carrots, and onions in the oven before we left for church. What a wonderful fragrance we smelled when we got home. The whole family would sit around the table to a memborable time and a delicious meal. (After clean-up, afternoon nap). :o)

ReplyDeleteIt has to be my husband Richard's Birthday dinner. He would make Fried chicken breast, mashed potatoes and pan gravy, baked corn and green bean casserole. He made this for all of the children's birthday. The kids are now 33,31,28 and Richard has passed on but I have taken over this job. It's not the same but I feel it's very good.

Just one favorite meal? Don't know if I can narrow it down. There's the Lamb Curry Stew I cook on top of my wood stove in the winter. And the Cajun Meatloaf that is an Emeril recipe. And Chicken Cordon Bleu Lasagna. Just too many favorites!

ReplyDeleteMy favorite meal involved anything my granny cooked that included her potato salad as a side dish. Unfortunately, she was diagnosed with Alzheimer's disease and we didn't think at the time to ask her for the recipe. No one has it and she is no longer with us. It taught me a valuable lesson about not putting off writing down the family recipes!

ReplyDeleteMy favorite homecooked item is different from my favorite homecooked meal. LOVED my mother's mac & cheese, so have put a twist on it to make it into a meal rather than a side dish. Elbow macaroni, add ham cubes to the end of the boiling to mix it all together, drain. Stir in cheese sauce made with a rue and using sharp cheddar cheese (we use Tillamook) and sometimes I add in a bit of Swiss, or cream cheese, or Monterey Jack, or Muenster ... mix it up! Put it all in a casserole dish. Top with Italian Bread crumbs (also my touch as I love the crispiness of it!). Bake and YUM! Sometimes I even put the veggie in ... broccoli or peas. I always make more than I need because the kids love the leftovers. My mother would serve a pea casserole (peas, mixed with a cream soup, crunchy stuff on top). A dinner of ham, mac & cheese, and pea casserole was out of this world!

Just reading through all the comments, takes me back........ I was blessed to be raised in a large family with wonderful cooks.... but my favorite recipe is homemade chicken and noodles,, fresh butchered farm chicken,, simmered for a day with herbed salt made by a family member from an organic herb bed and homemade thick noodles.... made from scratch that day ,, house smelled wonderful all day!.......... Soups are the comfort food .. thats a lost art in this generation.
