Eclair Cake


I'm pretty sure this "cake" goes down in history as, by far, one of the easiest desserts to make. And you know what? People go nuts for it! It shows up at just about every potluck around and it is one of the first things to go.  It is delicious and it is so darn easy.  No baking is required for this dessert! The hardest part? Waiting to eat it! This is a great dessert for a crowd. Just double the recipe, pop it all into a 9x13 pan and put it out on the table when everyone is ready for dessert.
Ingredients:
1 (3.5 oz) package of instant vanilla pudding mix
½ (8 oz.) container of Cool Whip, thawed
1 ½ cups of milk
1 package of graham cracker squares
1/2 tub of chocolate frosting


Directions:
In a medium bowl, mix together the pudding mix, milk and Cool Whip. In an 8x8 dish, arrange a single layer of graham cracker squares on the bottom.  You may have to break them up a bit to get enough crackers to cover the bottom of your dish.  It doesn’t have to be pretty or perfect.

Spread half of the pudding mixture on top of the crackers.  Layer another layer of graham crackers over the pudding mixture.  Then layer the other half of the pudding mixture on top of crackers.  Top with a final layer of graham crackers. Put plastic wrap over dish and put in fridge for about 30 min to an hour to allow pudding to set.

When pudding has set up, put the tub of chocolate frosting in the microwave for about 15-25 seconds to soften (remove lid and aluminum foil top before microwaving).  Take out and stir frosting.  It should be easily spreadable now.

Remove plastic wrap from dish and evenly spread chocolate frosting all over the top layer of graham crackers. Place plastic wrap over top of dish and put back in fridge.  Now, forget about this dessert until tomorrow.  This dessert gets better over time.  The graham crackers need time to soften up. When ready to serve, slice in squares and enjoy cold!
Cook’s Note: This dessert does not take long to prepare but it definitely needs time to set up.  Make this the night before you actually need to serve it.  For variation, try using chocolate graham crackers with white chocolate pudding~yum!

  32. YUMMY! This cake is one of our favorites. Only difference is the recipe I was given uses a homemade chocolate topping, but using canned would be great in a bind.
    I have to tell you our FAVORITE way to serve it is with strawberries, either the frozen kind, thawed or fresh, it just takes it over the top cook. Plus it looks pretty and Valentiney!

  73. I made this today, and needless to say, it did not make it 'overnight' in the fridge. I held-out for about 5 hours and then I absolutely HAD to 'test' it! (-My kids are going to be SO mad at me when they wake up to find Mommy ate a piece when I told them it had to sit overnight! LOL). It is absolutely delicious!   76. Hi Brandie! So, I have been patiently waiting to make this cake (it just didn't seem like a "winter" cake), and today I've decided the wait is over! Only thing...I didn't have any Vanilla pudding :( No worries though, I did have 1 White Chocolate pudding mix and 1 Cheescake pudding mix(I'm doubling the recipe of course). Undaunted, I set forth, and let me tell you...OMG...it is good! I love the creamy yet tangy flavor from my pudding combo! I can def see where you could let your creative juices,..errr...puddings flow with this recipe! Thanks for posting!

  79. I just made this! I used the low fat graham crackers, sugar/fat free pudding, lite whipped cream, and regular chocolate fudge icing!! I try to cut out calories when I can. Can't wait to have it for dessert tonight!
