FREQUENTLY ASKED QUESTIONS:
This is typically what I use for this recipe, but any butter crackers should essentially work. Club crackers are store-brand versions of Ritz crackers also work great!
It helps the chicken stay moist and adds that additional buttery flavor. But do not place it directly over the chicken, just around it. It helps to crisp it up just a bit more too.
There are so many different sides that you can serve with this recipe. We like mashed potatoes and mixed vegetables. But you can do a side salad, pasta salad or whatever you think would taste good with the chicken itself.
Use a kitchen thermometer inserted into the thickest part of the chicken, when it read 165 degrees F, then the chicken is done and safe to eat.
Place cooled chicken in an airtight container in the refrigerator where it will keep for up to 3-4 days. You can reheat in the oven or microwave.

HOW TO MAKE RITZ CRACKER CHICKEN:
Preheat the oven to 375°F. Spray a 9×13-inch baking dish with cooking spray, set aside. Season the chicken breasts on both sides with the salt and pepper, set aside. Place the eggs in a medium-sized shallow bowl and beat well with a fork, set aside. Dip the chicken into the egg and coat it, let any excess egg drip off.

Place the chicken into the baking dish. Repeat with the remaining chicken. Take ¼ cup of the leftover cracker mixture and sprinkle it on top of the chicken.

Place the diced butter around the chicken, not directly on top.

Bake for 30 minutes, check for an internal temperature of 165°F, if it is not done, put it back in until an internal temperature reaches 165°F. Cook time will vary on how big the chicken is.

Garnish with parsley, optional, and serve immediately.

Best recipe I’ve used for Ritz Chicken. make it a few times a month and is a favorite in our house!!
Hi Brandie!
I’m not one to give reviews, until now.
Today is the second time I’ve made this recipe – it’s more than just delicious. It’s easy to make and not too fancy; I gave your recipe to my sister and I know she’ll love it too!
I was going to send home the chicken I was making with my, “I’m almost 11 years old” grandson (lol) who was visiting, but the fabulous aroma was too much for him to resist! He actually sat in front of the oven door, looking through the glass for a sign it was done.
It took 45 minutes until the chicken reached 165 degrees and it was time to finally feed that boy, haha!
He ate an entire (big) piece and when he thought I wasn’t looking, he actually licked the plate! I’m a firm believer in table manners, but he enjoyed the chicken so much he was willing to risk getting a lecture. Now, that’s what I call a compliment!
When I asked if he really liked the chicken, he said, “Yes, it’s that good!”
I really enjoy your recipes, and I thank you for what you do.
even my picky 12 yr old granddaughter loves the recipe its really great!
We loved it!!
Thanks so much Judy!!
Pinning this. It looks delicious
Thanks!!
Thanks Kim!
