CREAMY CHICKEN CASSEROLE

This casserole is a go-to classic favorite. It’s one of those recipes that can be whipped up quickly and you don’t have to buy a long list of ingredients to make it. It can even be made ahead of time and frozen to eat for later.

WHAT DO I SERVE WITH THIS CASSEROLE?

I love to serve this with some fresh veggies like steamed broccoli, corn or Green Beans. You can also add those veggies directly into the casserole if you want. Also, a yummy green salad with lots of veggies would be perfect!

CAN I FREEZE RITZ CHICKEN CASSEROLE?

I can never have enough chicken recipes. But sometimes you don’t need a big ole casserole. So, you can split this recipe and put it into two smaller pans. Make one now and freeze on for later. Like with all freezer meals, it’s super important that you wrap it up well so you’re not dealing with freezer burn later on.

WHAT OTHER SEASONINGS CAN I USE?

You can certainly have fun with this casserole and add different seasonings and flavors. You could add onion powder and garlic powder to the cream mixture. Those are the most common seasonings most people have on hand. You could certainly use pretty much any seasoning that you would use on chicken.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • cream of chicken with herbs soup – you can use the regular cream of chicken without herbs or you can use cream of mushroom as well (or you can make your own from scratch and you can adjust the level of sodium and/or herbs that are used).
  • sour cream – you can substitute with plain Greek yogurt – a lot of people have asked about substituting mayonnaise and I have not tried that so I can’t say how that would turn out.
  • green onion – this is optional if you don’t like green onion, you could also substitute with regular onion or a shallot but it will be a stronger onion flavor than green onion.
  • store-bought rotisserie chicken – I find this easiest but you could use leftover cooked chicken or you could use canned chicken or you could boil or roast some chicken.
  • Ritz crackers – you can use regular saltine crackers or club crackers, if you want to reduce sodium you could use unsalted crackers.
  • salted butter – if you want to reduce sodium content, you could use unsalted butter.

HOW TO MAKE RITZ CRACKER CHICKEN CASSEROLE:

Preheat oven to 350f degrees. Spray a 2.5 quart baking dish (or a 9×9 square baking dish) with non-stick cooking spray. In a large bowl, mix together the soup, sour cream and green onion.

Then stir in chicken.

Spread mixture into the prepared dish. In that same bowl, combine crushed crackers with melted butter.

Sprinkle the cracker mixture over the casserole. Bake for about 25-30 minutes until the cracker topping is golden brown and the casserole is bubbly.

Ingredients

  • 10.5 ounce can condensed cream of chicken with herbs soup
  • 1 cup sour cream
  • ½ cup sliced green onion
  • 3 cups cooked and shredded chicken (I used a family size rotisserie chicken)
  • 2 sleeves Ritz crackers, crushed
  • ½ cup (1 stick) salted butter, melted

Instructions

  • In that same bowl, combine 2 sleeves Ritz crackers, crushed with 1/2 cup (1 stick) salted butter, melted.

  • Try adding in one cup of shredded cheddar cheese to the chicken mixture for a twist of flavor!

    I love this delicious recipe and have made it many times! Could it be done with zucchini instead of chicken or would that be too watery…?

    1. Hi Janet! I think it could be done with zucchini. You could try a couple things to help keep it from releasing too much moisture into the casserole. you can slice them and lightly salt the slices then let it drain in a colander for 20-30 minutes to draw out moisture. Or you can maybe even try coating them in cornstarch to absorb excess liquid. Hope that helps – please let me know if you give it a try!

It worked great with zucchini – I salted and the water drew out, then I sautéed the zucchini in olive oil with fresh thyme and parsley and garlic powder and salt and pepper (bc I figured chicken has more flavor than zucchini) and I substituted condensed cream of celery soup so it was aok for my vegetarian friend. Total winner!

    My three children have been begging me to make this because our family friend use to make it and the kids loved it. I found this recipe and lied to my children and told them it was our friend’s recipe they absolutely devoured the whole dish!     delicious and super easy! I made it just as directed. I used frozen rotisserie shredded chicken for ease and added my own herbs as couldn’t find herbed cream of chicken soup. I served with rice and broccoli. I’ll definitely make again.

    This was my go two recipe 40 years ago as my take as meal for new babies or times of sadness. Thought of it this morning with the bitter cold and the tough few months our family has endured. It is exactly as I remember, though I use townhouse crackers now. And and 3 tablespoons of hot sauce to the soup/sourcream mixture and add cheese, now. Toddlers and young kids it’s better with no substitutions. shared this with so many friends. Thanks for the memories

    I’ve been using this recipe for several years now, and it always turns out great. I find that using light sour cream doesn’t alter the flavor, and I can usually double the recipe while still only using one rotisserie chicken (I can usually get five cups of chicken off of the rotisseries our local supermarket sells, as long as they’re over 2lbs). I usually use only one sleeve of Ritz, even for a double recipe, because we prefer a less dense topping. It turns out creamy and delicious, with a bit of crispness on top from the crackers. Always a crowd pleaser!

    I made this with what I had on hand because I didn’t want to make a run to the grocery store. I had cream of mushroom soup and only saltine crackers instead of Ritz. I used unsalted butter and I added frozen mixed vegetables. It was so good! Thank you for the recipe, I will get the cream of chicken and the ritz crackers the next time I’m at the grocery store and make it according to the recipe.

    This was delicious! I didn’t have green onion so I left it out! I added a little cream cheese and it made it extra creamy. My husband loved this dish! The next day when I heated it up I added green peas and it was so good! Will be making this again!!

    Really good! Opted for heart healthy chicken soup and unsalted butter to cut down on salt. Tastes just like pot pie filling. Will definitely try again served over biscuits or with dinner rolls on the side.

    This was delicious! needed a quick recipe for some uncooked chicken this sounded good I allowed an extra 25 mins for the diced uncooked chicken

    I absolutely love this quick and easy recipe! Delicious! This time I cubbed up 3 boneless skinless chicken breasts and browned in a bit of olive oil instead of shredded rotisserie chicken. Absolutely delicious! Ya can’t screw this recipe up! Thank you!

  13. Hey Brandie, can’t wait to make this for family dinner next Sunday but want to prepare and freeze on Thursday and won’t be back till Sunday and I need to know do I prepare and than freeze or do I prepare and cook before freezing? Sincerely,

    1. You can actually do either to be honest. But I would probably not cook it first. If you have time, let it defrost in the fridge first before baking 🙂 You could technically cook it from frozen but it will take longer and I don’t know how long to tell you since I’e never cooked it from frozen.

    This is my family’s favorite dish. The only thing I do differently is omit the green onion and add 3 Tbsp of ranch seasoning mix. We serve it over Jasmine rice or egg noodles and steamed broccoli on the side. So good!

    I’ve been meaning for comment several years but didn’t get around to it. I made just minor adjustments. I wanted more onion flavor so I used onion powder and also a little garlic powder and black pepper. It was delicious with mashed potatoes. Thanks for this.

    I’ve been making this since Covid.. It’s my girlfriend‘s favorite dinner.❤️ only thing we changed is cubed chicken instead of shredded. I am trying shredded tonight though!

    1. I’m sorry but why did you use cottage cheese? That’s not in the recipe. There also isn’t any cream cheese. I’m not sure why you’re reviewing this recipe when you didn’t even make the actual recipe

    First time I have made it. Just my husband and I and we loved it. I did goof and used 1sleeve of ritz and a stick of butter, but it was still good. As it is to rain all day tomorrow, we will be having leftovers with our favorite beer.

    Everyone loved this! The cream of chicken with herbs and the sour cream was really nice, and the crispy buttery cracker topping really made every bite. I had to omit the green onions, because of a guest’s dietary restriction, but we didn’t seem to miss them. I would like to hear if anyone thinks they add a lot to the flavor, as I may make it that way some other time.

      I’ve made this several times and it is so good and easy. We serve with side of broccoli or brussel sprouts. I add a little cream cheese to the wet mix for added richness. Lots of black pepper. Thank you for sharing!

    I saw this recipe and decided to make this for supper. I was missing a couple of items after I had begun to mix it and decided to go ahead. The longest thing it took me to do was stripping the chicken. I thought I had cheddar but it was Colby jack. I went ahead and used that. I had planned on making a double as we have appointments tmrw at Duke. I put in mixed veggies with the chicken and soups, one mushroom and one celery, also some broccoli. I sliced a sweet onion very thin and used that in place of the green onions. For the topping, I did as you said with the Ritz and mixed a cup of mozzarella in with the crackers and butter. Thank you so much for this recipe. I think I will do as some of the others said and try canned chicken. All in all, this is a wonderful recipe!

    I made this once before in loved it, my question is do you think cut up chicken would be ok instead of shredded? I have left over cut up and thought I would use that instead of buying a whole new chicken

    Mom has been making this casserole all my life. Since I was a child. Even I make it sometimes but her recipe didn’t call for green onions. But it’s very delicious! a family favorite.

    I have made this about 20 times now. It is perfect! I usually substitute half of the sour cream for Duke’s mayo and the texture is awesome. Also, my store doesn’t have the soup with herbs, so I use some dry ranch seasoning, garlic powder, onion powder, and black pepper. Very, very good! Thank you so much.
