Chicken and Bisquick Dumplings (+Video)

This Easy Chicken and Drop Dumplings recipe is full of flavor and can be made in about 30 minutes. A creamy broth, tender chicken and fluffy dumplings!

AN EASY, CREAMY ONE POT MEAL

Chicken and Bisquick dumplings is a classic comfort food dish made with diced chicken, vegetables, and a savory broth, topped with tender dumplings made from Bisquick baking mix. The dumplings are dropped by spoonfuls into the pot and cooked until they are puffy and cooked through. Serve with a side salad and some biscuits!

What is Bisquick?

Bisquick is simply a pre-made baking mix of flour, shortening, salt, sugar and baking powder. There are several store brands that can also be used here. Just make sure it has the same ingredients listed as the Bisquick baking mix.

What can I substitute for chicken tenders?

You can use some rotisserie chicken in this which gives it a wonderful flavor or if you have leftovers from a roasted chicken. Chicken breasts or chicken thighs can also be used.

How do you store leftover chicken and dumplings?

Chicken and Dumplings don’t always make the best leftovers. The dumplings will continue to absorb the liquid so when you make this, be sure you’re going to eat it all the same day.

Can you freeze chicken and dumplings?

Just like storing leftovers, it is not recommended to freeze chicken and dumplings as the dumplings will continue to soak up the surrounding liquid and will become dense and thick and no longer fluffy.

Can I make homemade dumplings?

Yes. You’ll need:
2 cups all-purpose flour 
3 teaspoons baking powder 
3/4 cups of milk 
1/3 cup vegetable oil  
1/2 teaspoon salt
Make the dumplings by mixing the flour with the baking powder and salt in a mixing bowl then stir in the milk and oil until it forms a sticky dough. Continue with the rest of the recipe as written.

Can Chicken and Bisquick Dumplings be made in the slow cooker?

Yes. Add all the ingredients to a 5 quart slow cooker (except for the Bisquick and milk) and cook on low for 4-6 hours until chicken is cooked. Then mix together Bisquick and milk then drop by tablespoonfuls into the slow cooker and cover. Cook for an additional 30-60 minutes (or until dumplings are cooked through and no longer doughy.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • chicken tenders
  • onion
  • chicken stock or broth
  • milk (or half & half)
  • chicken gravy mix (see note below)
  • frozen peas and carrots
  • salt and pepper
  • Bisquick baking mix
  • warm water
  • dried parsley (optional)
Bisquick, chicken stock, peas and carrots, chicken gravy mix, milk, chicken tenders, onion and seasonings.

Note: For a creamier chicken and dumplings, use a can of cream of chicken soup instead of the chicken gravy packet. All the other ingredient measurements remain the same.

HOW TO MAKE CHICKEN AND BISQUICK DUMPLINGS:

Place a large pot on stove over medium high heat, add chicken broth, diced onion and diced chicken tenders. Cook until onions turn soft and chicken is cooked. Season mixture with salt and pepper.

In a small bowl, whisk together gravy mix (or cream of chicken soup) and milk. Pour into pot.

Stir and bring up to a boil (to thicken slightly.) Add frozen peas and carrots.

In a medium bowl, combine Bisquick with warm water. Stir until combined.

Drop tablespoonfuls of prepared mix into the pot, spacing dumplings as evenly as you can.

Cover pot tightly and reduce heat to medium low. Steam dumplings 8-10 minutes until puffy and no longer doughy in the middle. Remove from heat and serve.

Ingredients

  • 1 pound chicken tenders, diced
  • ½ onion, finely diced
  • 32 ounce container chicken stock
  • 1 packet chicken gravy mix (or cream of chicken soup)
  • 1 cup milk (or half & half)
  • 1 cup frozen peas and carrots (optioal)
  • 2 cups Bisquick baking mix
  • cups warm water
  • salt and pepper, to taste

Instructions

  • Place a large pot on stove over medium high heat, add 1 pound chicken tenders, diced, ½ onion, finely diced and 32 ounce container chicken stock.

  • In a small bowl, whisk together 1 packet chicken gravy mix and 1 cup milk.
  • Pour gravy mix into pot. Stir and bring up to a boil (to thicken slightly).
  • Add 1 cup frozen peas and carrots (if using) and stir.
  • In a medium bowl, combine 2 cups Bisquick baking mix with 2/3 cups warm water. Stir until combined.
  • Drop tablespoonfuls of prepared mix into the pot, spacing dumplings as evenly as you can.
  • Cover pot tightly and reduce heat to medium low. Steam dumplings 8-10 minutes until puffy and no longer doughy in the middle.
  • Season mixture with salt and pepper, to taste. Remove from heat and serve.

    This recipe brings back childhood my memories of Mom making beef Tewa and dumplings for a Monday meal. The stew was Sunday leftovers. It was one of my favorite meals as a kid. Tonight I followed your recipe for my granddaughter and her fiancé. They loved it. Thank you!

    For the drop dumplings. Do you use a teaspoon or tablespoon to measure the dumplings before you put them in the pot? I find that if I make them too big they don’t cook all the way through.

    1. Make sure your stew is on medium heat and bubbling a bit, before adding dumplings. I use a tablespoon to drop them into stew. Let them steam with lid on for 15 mins.Dont lift lid at all during this time!
      They should be cooked perfectly by then.

    This was a hit at my house. I doubled it as I had a large rotisserie chicken. Since I doubled it I had leftovers so I used a slotted to spoon to remove the dumplings from the liquids. Refrigerated liquids and dumplings separately and then combined them and reheated gently on stove until just warm through. Just as good the second time around. We enjoyed cranberry sauce and a salad with the it.

    I am a 'homemade egg noodle' girl, but my husband has always talked about his mother's drop dumplins' made from Bisquick. He called when he got off work, asking if I had lunch for him. I said, sure! I knew I had about 30 min. I had chicken in the freezer from making a beer can chicken, so hurriedly thawed that in the microwave. I softened my cut up carrots in there, too. With 3 cans of broth, a can of cream of chicken soup, a can of peas I put in right before dropping in the dumplins, along with salt, pepper, oh, and I mixed the parsley in with my Bisquick, I had lunch ready for him when he walked in the door. I do think it would've been better if I'd used original Bisquick instead of the gluten-free, but that's what I had. He ate 2 bowls, saying it was good. I said, "I know it's not like how your (late) mom made it…" He replied, "No, I think it's like how my wife makes it." 🙂

    I made this for dinner last night. It had been a cold snowy day. I left out the gravy mix because I didn't have any on hand. I made a few pre made noodles to add to this when the dumpling were done. This tasted so good. My husband couldn't stop saying how good they were! Thank you for taking the time to share your recipes. I really think you should consider writing a cook book…

    This is a good recipe but I didn't have chicken gravy so I substituted with chicken bullion and found that the dumplings thicken the broth well.

    Definitely a keeper! My husband ate this for three days in a row! I added a few more frozen veggies (a cup each of corn, green beans, and carrots, since I didn't have the mixed peas and carrots). I also had to make a sudden grab for the Joy of Cooking, for a pancake mix recipe, since I was about to add the dumplings and realized there was no Bisquick in the house! But it turned out great, my husband loved it, and it was super easy and fairly quick to make. I'll be making it again, probably pretty frequently. Thank you!

  13. Hi Kim! As much as I love my Crock Pot, I probably would not recommend this recipe for it. I think the broth would be fine in it but not the dumplings. In order for them to stay on the fluffy side, they need to be steamed in the pot for just a few minutes. You could try adding them in the Crock Pot during the last 15 minutes or so of cooking. You just don't want them to get too dense or be too mushy in the middle. Hope that helps!

    We never had this growing up. My Dad wasn't a big soup fan, and putting dumplings in there would not have gone over well with him. Me on the other hand, I can't wait to try this!!
