Using only one pan, this BBQ Pineapple Chicken is the perfect weeknight meal. Delicious flavors come together to make this a fun, easy and tasty dish!
AN EASY SKILLET RECIPE
When it comes to weeknight meals, I love quick and easy. This BBQ Pineapple Chicken recipe is made all in one pan and uses ingredients that are easy to find and come together to make a delicious flavor combination. This is great served over rice, with a side salad, or some garlic bread. The perfect recipe when you are craving something a little sweet and savory!
TIPS ON HOW TO MAKE BBQ PINEAPPLE CHICKEN:
- You can use any bbq sauce you like, store bought or even homemade works as well.
- We use shallots in this recipe. If you cannot find shallots, you can use a finely diced sweet onion.
- Pineapple chunks work best, but you can also use tidbits for smaller pieces. Do not use crushed pineapple.
- Make sure the pineapple is completely drained before adding it to the pan.
- Make sure your chicken is cooked thoroughly before removing from pan. The chicken's internal temperature should be 165F degrees.
- This can be served all by itself, over rice, with steamed broccoli or a side salad!

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)
- bacon
- chicken breasts
- salt and pepper
- shallot
- bbq sauce
- pineapple chunks
- chicken broth
- soy sauce
- brown sugar
- garlic powder
- green onions
HOW TO MAKE BBQ PINEAPPLE CHICKEN:
In a large skillet, cook bacon strips until crispy. Place the cooked bacon on a cutting board and reserve the bacon fat.

Season both sides of the chicken breasts with salt and pepper. Add the chicken breasts to the pan and cook for 5-7 minutes per side or until the chicken is cooked thoroughly and the internal temperature of the chicken breast reaches a temperature of 165F degrees. Place chicken breasts on a plate to rest.
Cook the diced shallot in any remaining grease until softened (or add ½ a tablespoon of olive oil or butter if there isn't much bacon fat left.)
Stir in the bbq sauce, pineapple chunks, chicken broth, soy sauce, brown sugar and garlic powder. Cook on medium high heat for 2-3 minutes or until the sauce is bubbly and thickened.
Remove from heat. Chop the bacon and stir into the sauce. Return the chicken breasts to the pan.
Spoon the sauce over the tops of the chicken.

Garnish with the sliced green onions and serve immediately.
HOW TO STORE BBQ PINEAPPLE CHICKEN:
If you have any leftovers, this needs to be stored in the refrigerator within 2 hours of it being cooked. Place in an airtight container or ziptop bag and place in the refrigerator. It should keep up to 3-4 days. Reheat in microwave until heated through. You can also freeze this recipe. Put chicken and sauce in a freezer bag and place in refrigerator to cool then transfer to the freezer. This will keep in the freezer for up to 3 months. When ready to eat, let defrost in refrigerator and reheat in microwave until heated through.

I have read this recipe several times and still do not know when to add the barbecue sauce. The recipe mentions sauce several times, but I find it unclear as to the sauce being made with soy sauce the brown sugar sauce made or the barbecue sauce. Please help!! I really want to try this recipe, but just need a clarification. Thank you.
