Strawberry Chocolate Chip Cookies

Hi, friends! It's Holly from Life in the Lofthouse bringing you some Strawberry Chocolate Chip Cookies. These cookies, wow they are always a hit! With the help of a box cake mix, you can have these ready in hardly any time at all. One more reason why I love using cake mixes in recipes.
These cookies have a perfect strawberry flavor with lots of milk chocolate chips in every bite. Not only are they tasty, but really pretty. Great for parties and holidays! The best part about these delicious things is their soft and chewy texture. It gets me every time I eat one. Or five. ;)
Ingredients:
1 (15.25 oz.) box Strawberry cake mix
1 teaspoon baking powder
2 large Eggland's Best eggs
1/3 cup vegetable oil
1 cup milk chocolate chips
Directions:
Preheat oven to 350° F. Line 2 cookie sheets with parchment paper or grease with non-stick spray.

In a large bowl, add cake mix and baking powder. Whisk together. Add eggs and vegetable oil. Mixture together with a spatula until it is all combined and all the pieces of dry cake mix is gone. Stir in chocolate chips.

Place rounded balls of dough, about 2 Tablespoons each, onto the cookie sheets. Bake for 10 minutes only. Remove from oven and let cookies cool on cookie sheets. No need to transfer to wire racks. Serve and enjoy!

Yields: 2 dozen cookies
Enjoy!

  3. The combinations are endless.I have been making these for years. They are perfect when my son forgets to tell me he needs bake sale items for school. A few of my family's favorite pairings are a chocolate cake mix with semisweet chips, a yellow cake mix with Heath chips, and the Funfetti mix with chocolate chips. I hope everyone tries these!

  6. I made this recipe last night but changed it up a bit. A box of family size brownie mix, two eggs, 1/4 cup oil and two tablespoons of instant coffee. Mix well. Drop 1 tsp size on Reynolds no stick and bake at 350 for 12 minutes. I then cool them, add some cream cheese frosting and chocolate chips and make mini sandwiches out of them. Sprinkle with powdered sugar and instant deliciousness!!

  8. Hi! This sounds and looks yummo! How long does it last on the shelf? I want to make it for school for valentines day... will it still be ok if I make it this weekend for next Friday?

  9. Jeannette, these really are best the day or the day after they are made. However, if you wrap them really well and remove as much of the air as possible, then they should last for a week :)
