Pizza Soup

Do y'all enjoy soup as a whole meal, not just as a side dish or appetizer? I love those kinds of soups that are hearty and packed full of flavor so they are not only filling but they warm your bones on cold days. Well, this is one of those soups! I am a soup and salad person all the way.  The two go together like Forrest Gump and Jenny. Or like Chili and Cornbread. So, if you love these hearty soups like I do, then you are gonna LOVE this one! Oh my word, this turned out so incredibly yummy. It really has all the flavors of your favorite pizza, packed into a soup. I just loved it! Let's dig in!
Ingredients:
1 lb. Italian pork sausage
1/2 cup onion, chopped
1/2 cup green pepper, chopped
4 cups water
2 (15 oz.) jars or cans pizza sauce
1 (6 oz.) package pepperoni, chopped
2 tomatoes, diced
1 tsp. sugar
1/2 tsp. Italian seasoning
1/2 tsp. garlic powder
1/4 tsp. dried basil
1/2 tsp. dried rosemary
salt & pepper, to taste
Garnish: shredded mozzarella cheese and croutons
Directions:
In a large pot, over medium heat, brown and crumble sausage along with chopped green pepper and onion.  I always season the meat with a little salt and pepper too. Once browned, drain any excess grease.
Add in both jars (cans) of pizza sauce.
 Then stir in water.
Add in spices and seasonings (Italian seasoning, garlic powder, basil, rosemary, salt & pepper).
Stir in sugar. Note: I like to add just a touch of sweetness to tomato-based soups and sauces.  I think it helps balance out the acidity of the tomatoes without making actually making it sweet at all.
Stir in pepperoni and chopped tomatoes (not pictured.) Bring to a gentle boil, then reduce to low and allow it to simmer for just about 10 minutes.
Then serve. Here's how it looks straight out of the pot.
But we love to add a bit of shredded mozzarella cheese and croutons to the top. That part is totally optional. This is such a flavorful soup all on it's own.
Cook's Note: Feel free to add in your favorite pizza toppings to this soup to make it the way your family will love. Mushrooms and olives would be great additions!

Enjoy!

  5. I made it using turkey sausage crumbles, and a jar of spaghetti sauce. I used one cup of beef stock and probably another two cups of water, since the sauce jar is a bit less than 2 cans of pizza sauce. I had frozen pepper and onion stir fry veggies, so I just chopped up some of that and threw it in. Shook on the usual Italian spices, some pepper, and at the last minute I threw in some ditalini. That only takes 10 minutes to cook up and adds a nice touch to the soup. It was delicious and really very easy. Great on this cold day.
