Fluffy French Toast (+Video)

No limp and soggy french toast with this recipe! The thick bread in this Fluffy French Toast is dipped into a pancake-like batter – just like your favorite diner!

FRENCH TOAST DIPPED IN PANCAKE BATTER

Raise your hand if you’re sick of soggy French toast? I know people who don’t eat or make French toast just because of that problem. They like the flavors, just not the texture. Well, after you try this recipe, it’s going to be the best feeling since, well, sliced bread. No sogginess but ALL the flavor!

PANCAKES + FRENCH TOAST = FLUFFY FRENCH TOAST

Basically what we are doing here is making a pancake batter and dipping the french toast in it. So these are kinda like pancakes and French toast all in one. You get a thin, fluffy pancake enveloping thick cinnamon French toast. If you want a more traditional French toast recipe, don’t forget to check out my Brioche French Toast!

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • all-purpose flour
  • baking powder
  • sugar
  • ground cinnamon
  • milk
  • eggs
  • vanilla extract
  • Texas Toast Bread (thick sliced bread)

HOW TO MAKE FLUFFY FRENCH TOAST:

In a bowl combine all the dry ingredients (flour, baking powder, cinnamon and sugar). Stir together well.

In an 8×8 square dish, or a wide bowl, whisk together the wet ingredients (milk, eggs and vanilla extract).

 Mix together the wet and dry ingredients. Whisk vigorously.

Batter will be lumpy. I know, for some folks, lumps just cannot exist in any kind of batter. But this is how the batter goes here. Begin heating up your large skillet over medium-high heat. It’s best to use a nonstick skillet for this or a large nonstick electric skillet/griddle. If you don’t have nonstick, be sure to coat the pan well with vegetable oil or nonstick cooking spray. Once skillet has heated up, begin dipping your bread slices into the batter. Dip one side of the bread, flip it over and dip the other. Let any excess drip off.

 Then place coated bread immediately onto the pre-heated skillet.

Flip when browned and brown the other side.

Once both sides are golden brown, they are done! Sprinkle with a little powdered sugar and drizzle on some fresh maple syrup. Look at that thick, fluffy french toast. No sogginess!

Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon sugar
  • 1 teaspoon ground cinnamon (more to taste)
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 12 slices Texas Toast bread (thick sliced bread)

Instructions

  • In a bowl combine all the dry ingredients (flour, baking powder, cinnamon and sugar.) Stir together well.
  • In a square dish, or wide bowl, whisk together the wet ingredients (milk, eggs and vanilla extract.)
  • Add dry ingredients and wet ingredients together and whisk vigorously. Batter will be a little lumpy.
  • Heat a large nonstick skillet over medium-high heat. Begin dipping bread slices into the batter.
  • Dip one side of the bread, flip it over and dip the other.
  • Let excess batter drip off then place coated bread immediately onto the pre-heated skillet.
  • Flip when browned and then brown the other side. About 4-5 minutes per side.
  • Sprinkle with powdered sugar and drizzle on some maple syrup to serve!

Notes

  • Leftovers can be stored in the refrigerator (covered) for up to 2 days. They can also be frozen. Flash freeze the French toast on a baking sheet for about 30 minutes. Then place slices into a freezer safe ziptop bag. Freeze for up to 2 months.

    My 10 yo daughter has a major sweet tooth. Recently, on a mini weekend trip, she picked out a restaurant for breakfast. She picked The Famous Toasteryy. We had never been there but it was a winner. She ordered the French toast and fell in live with it
    For years I have been making her French toast but just never could perfect it. I found your recipe and thought I would give it a try and we all absolutely loved it. My daughter said how it was, not only, great tasting but also put it on an equal playing field with the French toast from The Famous Toastery. Needless to say, I have found the recipe that will be the go-to recipe for french toast. Thank you so much for helping and my search for a French toast recipe.

    I make something similar to this. I heat up a little veg. oil and fry it…it’s almost like a funnel cake! My grandma used to make it for me as a child. She’d take the left over batter and pour it into the warm oil and make a crepe! My hubby won’t eat French Toast any other way now!

    I decreased the amount of flour to 1/2 cup and kept the rest of the measurements the same. I thought it turned out great. The batter coated the bread but wasn’t too thick. I also used brioche toast from Trader Joe’s which I love.

  7. I used to eat soggy French toast all the time. And to be honest it really sucked. Never get an even layer of cinnamon either. 🙁 I've been using this recipe now for over a year and a half and it's always a hit. Plus it reheats well, so I cam eat all the left over. BONUS!! Thank you so much for making my Sunday (and every other day that ends in y) breakfast so much better 🙂

  8. I had been looking for a good french toast recipe for quite a while. All of the others that I had tried came out extremely soggy. This recipe was perfect. I added more cinnamon and vanilla. Fantastic!

  9. Awsome! that's all I have to say!!!! I made this recipe this morning for my kids, I made it exactly like the recipe calls for and all I did was add sprinkles and chocolate chips my kids devoured them!!!! Such a fantastic recipe thank you!

  10. After reading the reviews….I made a few changes to this recipe. I only used 1/2 cup bread flour and only 1 tsp baking powder, and I used 4 eggs instead of just 2 eggs. it wasn't to thick & my French toast turned out fluffy & perfect! I did as the recipe instructed & added my dry ingredients to the wet which left the batter a little lumpy but not thick….the lumps cook out. My French toast turned out fluffy & perfect! Only made 7 slices tho. ����������������

  11. I'm 50/50 on this one! I made the batter exactly as directed and it felt like I was dipping my toast into pancake batter (SO THICK)… so I made a few pieces like this, and then added more milk and tried it that way too. The original was much less "soggy" but so dense, the more milk made the other pieces soggier, but more fluffy. I also added more cinnamon to the second batch. I liked adding the flour, it seemed to give a better distribution of the cinnamon but I'm torn about it being too much and then too little. I'll have to play with this recipe some more. But overall, very good!

  14. I was looking for a different way to make French toast this morning and found your recipe. I followed the recipe exactly and would not use the word fluffy in the title. My batter was rather thick and the toast was dense and heavy. It tasted very good but the heaviness of the bread was a bit much for my taste. The batter doesn't soak into the bread like my thin runny egg dip so the flavor is really on surface of bread. The positive is the taste is very good but the negative is the heaviness of the bread being encased in this thick batter. Maybe if I try again I would add an extra egg, less flour, or more milk.

  15. Found this via Pinterest and just thought I'd tell you that if you put in the flour first, make a well in the middle and then whisk in the eggs followed by the milk – you won't get any lumps. Works for all batters, pancake, waffle etc.
