Costco Chicken Bake

The Costco Chicken Bake is a fan favorite! I am not sure if they’ve changed the chicken bake recently but it doesn’t seem to taste as good as it used to. So, I decided to make my own version and this one is so good (dare I say better than the original!) It’s loaded with tender chicken, three different cheeses, creamy Caesar dressing, and crumbled bacon all wrapped up in a crusty bread (in this case, pizza dough!)

For this recipe, we cut the dough into four pieces and we only use three of the pieces. So you’ll have a small piece to discard. If you want to use that piece, you can make some pizza dough breadsticks or a few little Garlic Knots.
I like using the one rolled up in the refrigerated section (see my ingredient image below), if you want to use something else you can try it. You can use a Homemade Pizza Dough if you prefer.
Yes, you can use all 4 pieces of the pizza dough. The inside will have less filling if you use all 4 pieces (instead of the 3 the recipe calls for.)
A fresh garden salad or Caesar salad goes great with this. You can also make the chicken bakes and cut them into slices to serve them as an appetizer.
This is best served immediately. You can leave them in the fridge for up to 2 days. You can reheat this in the microwave, oven, or air fryer.

Ingredients Needed: (See Recipe Card Below For The Full Recipe)
- chicken – you can use any cut of chicken for this. Just make sure the chicken is seasoned with garlic powder, kosher salt, and black pepper. You can make this super easy by using rotisserie chicken.
- egg – the egg is essential, so the chicken bake gets a golden brown color (and it gives something for the cheese on top to stick to.)
- refrigerated pizza crust – you can use any brand of pizza crust you can even make your own. See my ingredient image below (Pillsbury or Great Value or the most common ones you find.) Make sure you use it while it is chilled so it doesn’t stick to the cutting board. If you are placing it directly onto the counter, you may need a bit of all-purpose flour to prevent it from sticking. Homemade Pizza Crust is also an option if you have some already.
- creamy Caesar dressing – you can use any brand of Caesar dressing. Homemade Caesar Dressing would be a good option as well.
- shredded mozzarella and provolone cheese + shredded Parmesan cheese – this cheese combination creates the best flavor but use what you prefer. Again, see my ingredient image below to see what I sed.
- bacon – I like to buy the premade bacon and crisp it up in an air fryer for two minutes. If you don’t want to do that, you can grab a 12 ounce package of bacon and cook it up and crumble it. If in a pinch, you can use the package of bacon pieces that you find in the grocery store by the salad section.
- green onions – if you don’t like green onions, just omit them.

How To Make Costco Chicken Bake
Preheat the oven to 400°F. Line a large baking sheet with parchment paper. In a small bowl, whisk the egg. Set aside. On a large wooden cutting board or on a large clean surface, open both tubes of pizza dough. Roll out each piece of dough to 12”x12”. Cut the dough so each piece is 6″x12”.
You will have 4 pieces. I used 3 pieces of dough and discarded the other piece (I give some ideas above on what to do with that extra piece.) I could only show two being prepared in the process photos below but this recipe makes 3 chicken bakes. For the pizza dough, use a pastry brush to spread ¼ cup of Caesar dressing on each one.

To each one, you will add ⅓ of the chicken. Top the chicken on each one with ⅓ cup of mozzarella and provolone cheese blend, and ⅓ cup of shredded Parmesan cheese. Add a third of the bacon and green onions to each one.

Start by rolling the ends in first, and roll moving away from you. Make sure it is completely sealed along the edge.

Place the chicken bake sealed side down onto a parchment paper-lined baking sheet. Use your pastry brush to coat the top and the side of the chicken bake with the egg. Sprinkle the remaining Parmesan, mozzarella, and provolone on top of each one evenly. Bake on the middle oven rack for about 20 minutes or until golden brown.

Slice and serve.

- ¾ cup Caesar dressing (divided use)
- 1 pound cooked and diced chicken (see notes below)
- 1 ½ cups shredded mozzarella and provolone cheese blend (divided use)
- 1 ½ cups shredded parmesan cheese (divided use)
- 2.1 ounce package microwaveable bacon, cooked and crumbled
- 2 green onions, sliced (I used the green parts only)
Instructions
- Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
- In a small bowl, whisk the 1 egg. Set aside
- On a large wooden cutting board or on a large clean surface, open both tubes of pizza dough. Roll out each piece of dough to 12×12-inches.

- Cut the dough so each piece is 6×12-inches. You will have 4 total pieces. For this recipe, we will use 3 pieces. NOTE: You can discard the 4th piece or you can use it and make an extra chicken bake. The amount of filling given here works best for 3 chicken bakes but you can spread it out into 4, it will just be far less filling than is ideal. I give ideas above in the post on what you can make with that extra piece as well.
- For the pizza dough, use a pastry brush to spread ¼ cup Caesar dressing on each one.

- To each one, you will add ⅓ of the cooked chicken.

- Top the chicken on each one with ⅓ cup of mozzarella and provolone cheese blend, and ⅓ cup of shredded Parmesan cheese.
- Add a third of the bacon and green onions to each one.

- Start by rolling the ends in first, and roll moving away from you. Make sure it is completely sealed along the edge.

- I diced up some boneless, skinless chicken breasts and seasoned with salt, pepper and garlic powder and cooked it up. This is a great recipe to make with leftover chicken or with some store bought rotisserie chicken.
