Coca-Cola Cupcakes

These Coca-Cola Cupcakes are a fun and flavorful dessert treat. They are rich, moist, chocolatey and have Coca-Cola in the cupcakes and the frosting!

A FUN SODA FLAVORED CUPCAKE

I enjoy cooking and baking with soda (as seen in my 7Up Cake and my Double Fudge Coca-Cola Cake). It adds a lot of flavor to many different types of dishes. Baking with soda is nothing new and it really gives great results to some baked goods. WIth these Coca-Cola Cupcakes, the dark soda helps bring out the chocolate flavor even more. Swirled with a Coca-Cola frosting, these cupcakes have so much flavor but aren’t overpowered by a cola taste. If you’ve never baked with cola before, or just want a fun new dessert to make, then you have to make this Coca-Cola Cupcake recipe!

FREQUENTLY ASKED QUESTIONS:

Can I use diet soda?

You will want to use regular, full strength Coca-Cola for this recipe. Do not use Diet Coke or Coke Zero. We want all the sugars and deeper flavors from the regular version.

Can I use dark cocoa powder?

Absolutely! This will actually bring out the flavors of the cupcake even more. If you want a nice and rich chocolate cupcake, dark cocoa powder will work perfectly.

How many cupcakes does this recipe make?

This makes about 22 cupcakes.

What is the best way to pipe the frosting on?

You can either use a piping bag or even a gallon ziploc bag for this. We use a Wilton 1M tip which you can fit both of these. You can also just spread on the frosting if you’d like with a knife or offset spatula. If you want really frosted cupcakes I would suggest making more frosting.

How do you store leftovers?

These can be stored in an airtight container at room temperature where they will keep for up to 1 week. These can also be frozen. It is best to freeze these on a sheet pan first and then place them in a freezer container so that the frosting doesn’t get smushed. They will keep in the freezer for up to 3 months. To defrost, remove to countertop until they come to room temperature and then enjoy!

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • all-purpose flour
  • salt
  • baking soda
  • cocoa powder
  • coca cola 
  • salted butter
  • granulated sugar
  • light brown sugar
  • eggs
  • powdered sugar

HOW TO MAKE COCA-COLA CUPCAKES:

Preheat oven to 350F and line a standard muffin tin with cupcake wrappers. In a medium mixing bowl combine flour, salt, cocoa powder, and baking soda. Mix until combined and set aside.

In a saucepan, over medium heat, combine Coca-Cola, butter, granulated sugar, and brown sugar. Stir and heat up until the butter is all melted, and the sugar is dissolved. 4-5 minutes. Don’t make it boil. Let the mixture cool.

Pour the cooled Coca-Cola mixture into a large mixing bowl. This step is important because if the Coca-Cola mixture is not cooled, when adding the eggs, you take a chance of the mixture to cook the eggs and the egg white will curdle.

Add the eggs and mix. Add the flour mixture to the Coca-Cola mixture, mix with a hand-mixer until all combined.

Once all the flour is combined, stop, don’t over mix.

Pour the batter into the prepared muffin pans to about 2/3 full.

Bake in a preheated oven for 20-22 minutes or when you insert a toothpick into the center and come out clean. Allow to cool completely while making the buttercream frosting.

In a large mixing bowl combine butter and powdered sugar (1 cup at a time). Mix in the Coca-Cola and mix until combined. Scoop the buttercream into a piping bag with a star tip nozzle. You can use a Ziploc bag for piping as well, just cut off one corner of the bag. Pipe the buttercream on all the cupcakes. Serve and enjoy.

Buttercream Frosting

  • 4 cups powdered sugar
  • 4 tablespoons Coca-Cola soda
  • ½ cup (1 stick) softened butter

  1. Is this enough batter to make a 9×13 cake with the frosting?? I never make cupcakes, but would love to do it as a full cake!

    1. Hi Leanne, I actually have a full cake recipe for a Double Fudge Coca Cola Sheet Cake linked above. You could make this into a sheet cake as well. Keep in mind, the frosting is probably more than you need though for a sheet cake because this is meant to give a lot of frosting on each individual cupcake. So you’d have to play it by ear in how much frosting you’d like to add to your sheet cake 🙂 Some like a lot and some like a thinner layer, totally up to you!
