The second I saw this viral Grillos’ Pickle Dip, I knew I had to make my own. It’s tangy, cheesy, creamy, salty, and packed with textures and flavors from crunchy dill pickles, crispy bacon, shredded cheese, and ranch seasoning. Such an easy appetizer that is absolutely a huge hit!

No, you can use any brand of dill pickles. Grillo’s are popular because they’re fresh and crunchy, but refrigerated pickles like Claussen are a great alternative. You’ll want about 1½ cups of chopped pickles total.

Grillo’s pickles are usually found in the refrigerated section of the grocery store, often near deli meats or other refrigerated pickles.

How do I keep the pickle dip from getting watery?

Pat the pickles dry with paper towels before mixing them in. This helps prevent excess moisture and keeps the dip thick and creamy.

What to serve with Pickle Dip?

This dip pairs best with sturdy dippers that can hold up to the thick texture. Try wavy potato chips, kettle chips, Ritz crackers, Club crackers, pretzel chips, or toasted baguette slices.

Yes! This dip actually tastes better after chilling. Let it sit in the refrigerator for at least 30 minutes before serving to allow the flavors to develop.

How long does Pickle Dip last?

Mine doesn’t often last to have leftovers. But, if you have leftovers, you can certainly keep them for later. Store the dip in an airtight container in the refrigerator for up to 4 days. I would not suggest trying to freeze this dip.

Ingredients Needed: (See Recipe Card Below For The Full Recipe)

  • cream cheese– softened to room temperature. Softening the cream cheese makes all the difference in the world on your ability to mix this dip. Cream cheese that’s still too stiff and hard will not mix well and this dip won’t be scoopable. Use these Tips to Soften Cream Cheese if you need them.
  • sour cream– You can use mayonnaise or plain Greek yogurt instead of sour cream depending on your preference.
  • ranch seasoning mix– use your favorite brand, or some Homemade Ranch Seasoning.
  • Grillo’s dill pickle chips
  • shredded cheddar cheese
  • bacon– cooked and crumbled. To make this easier, you can cook some bacon in the microwave or Air Fryer quickly, then crumble it up. If really short on time, I suppose you can use the bacon pieces in a bag. I think crumbled up freshly made bacon would give the best texture, but if in a pinch, the other options should work.

How To Make Grillo’s Pickle Dip

Beat cream cheese until smooth. Mix in sour cream and ranch seasoning. Fold in chopped pickles, cheddar cheese, and bacon.

Ingredients

  • 8 ounce block cream cheese, softened to room temperature
  • ½ cup sour cream
  • 1 ounce packet ranch seasoning mix
  • 16 ounce tub Grillo’s dill pickle chips, chopped
  • 2 cups shredded cheddar cheese
  • 12 slices bacon, cooked and crumbled

Instructions

  • Beat 8 ounce block cream cheese, softened to room temperature until smooth.
  • Mix in ½ cup sour cream and 1 ounce packet ranch seasoning mix.

  • Fold in chopped 16 ounce tub Grillo’s dill pickle chips, chopped, 2 cups shredded cheddar cheese, and 12 slices bacon, cooked and crumbled.

  3. What if the grocery store I patronize does not carry Grillo’s Pickle Chips, is it ok to use any other dill pickle chips or can you recommend a different brand?
