Preheat the air fryer to 350°F. In a large bowl whisk together the flour, sugar, cinnamon, and salt until combined.
Add the greek yogurt and mix until it forms a loose dough with a spoon. Using your hands, form the dough into a smoother dough.The dough will be sticky.
Form the dough into a ball and place it on a clean work surface that is lightly dusted with flour. Cut the ball into 6ths and then roll them between your hands to form 6 equal-sized balls.
Roll the dough balls on the work surface into a long rope shape, about 8 inches in length.
Bring the ends together and pinch to form a circle. Repeat with the other dough balls.
In a small bowl whisk together the egg and water.
Spray your air fryer basket with cooking spray. Place the bagels into the basket, not touching, you may need to do this in batches.
Brush the bagels lightly with the egg wash.
Air fry for 8-10 minutes until golden brown on the outside. Let cool slightly and serve.
Notes
Use as much or little cinnamon as you'd like.
Spread these with any of your favorite toppings.
Easily double this recipe to have more on hand or serve more people.
