Let shrimp soak in half a cup of buttermilk for at least 4 hours before cooking.
Create a station for breading the shrimp. Put flour and pepper in one bowl, half a cup of buttermilk in another, and panko bread crumbs in the last bowl.
Dip shrimp in flour. Then, dip in buttermilk. Then finally dip in panko bread crumbs until evenly coated.
Spray air fryer basket with non-stick cooking spray. Place shrimp in basket and spray shrimp with cooking spray.
Set to 390F degrees for 5 minutes. Flip, spray with cooking spray and cook for 5 more minutes.
Create bang bang sauce by mixing sriracha, mayo, and sweet chili sauce. Gently toss shrimp in sauce.
Garnish with cilantro (optional) and enjoy!

TO FRY ON THE STOVETOP:Add 2” of canola oil to a sauce pan and heat to 350F degrees. Once oil reaches temperature, carefully add shrimp and cook for 3 minutes per side.
