In a large skillet, cook and crumble 1 pound ground pork over medium-high heat until fully cooked. Drain any excess grease (there shouldn't be much at all) and place back into skillet.
Stir in 16 ounce package coleslaw mix, ¼ cup soy sauce, 1 Tablespoon toasted sesame oil, 1 Tablespoon grated fresh ginger and 3 cloves garlic, minced. Cook over medium heat, stirring occasionally, until coleslaw softens, about 5-8 minutes. Remove from heat.
Garnish with 2 green onions, thinly sliced, 1 Tablespoon fresh chopped cilantro (optional) and sesame seeds, if desired. Enjoy!
