Truffle Brownies~That Skinny Chick Can Bake

It's Wednesday so we have a another guest blogger. And this next gal is absolutely lovely. And you probably might've guessed from her blog title, she's skinny.
But she is so much more than that.
She is an amazing Mom, a loving wife, and a heckuva a baker (and cook!), a chocoholic and one of the sweetest and kindest folks I have meet since I began blogging.

Please meet Lizzy. She writes for her food blog, That Skinny Chick Can Bake.
Lizzy does her best to introduce new and exciting culinary creations to her family. 
She tries very hard to get her Oreo cookie-loving family to appreciate some more grown-up treats, like Marquise on Meringue or Pots de Creme

But she'll tell you that when she has done a bit too much experimental baking that her family will usually end up asking for more simpler (and just as yummy!) treats like Gooey Double Chocolate Cookies or her Better than Twix Bars.

And that is what is great about Lizzy's blog. She has everything from the simplest of recipes that even a novice baker can make all the way up to meals and desserts for the more advance cook. There is something for everyone! 

And she is sharing one of her favorite chocolate-y treats with us today. 
 This is one of those desserts that will look like you slaved away all day!
 It is elegant looking but easy to put together.
Lizzy has the recipes that make you look like a Goddess (or God) in the kitchen.
 Such a great dessert for the family or if you want to impress some guests.

Brandie is one of those gals you like instantly...and even though we've only chatted on-line, she's a dear blogger friend.  I was so touched when she asked me to be one of her guest bloggers.  As a fellow chocoholic, she even mentioned that I could share a chocolate arm twisting needed!

I chose to remake a brownie recipe from my blog's early days...back then, I was thrilled to get even one comment.  I also took lots of flash photos in my dark this was an excellent opportunity to improve upon a blog post featuring a well loved dessert.

I have altered these from my original recipe, baking in an 8 inch cake pan versus a 9 inch.  I prefer a thicker brownie, but if you don't own an 8 inch pan, a 9 inch will do...just decrease the baking time to about 15 minutes.  These rich brownies remind me of a flourless chocolate cake...wonderfully dense with a silky smooth, ganache glaze.  Fellow chocolate fanatics, you will adore this one~

I served this with fresh berries, but for company, I'd dust with powdered sugar and offer a scoop of vanilla bean ice cream or sweetened whipped cream. Thanks so much, Brandie!!! I loved being a Country Cook today~

Truffle Brownies...adapted from a Dan Smith and Stew McDonagh recipe

2 eggs

1/2 teaspoon salt

1 cup sugar
1 tablespoon vanilla
1/2 cup butter
3 ounces unsweetened chocolate, chopped
1/2 cup flour


1/2 cup semi-sweet chocolate chips

1/4 cup heavy cream

Preheat oven to 350º. Beat eggs and salt together with hand held electric mixer till frothy. Add sugar and beat till thick and pale yellow, 2 to 3 minutes. Add vanilla and beat till combined.

Microwave butter and chocolate for about a minute. Stir and microwave in 15-30 second increments till chocolate is melted and smooth. With mixer running, slowly add melted chocolate to egg mixture. Add flour and beat till just incorporated, less than a minute. Scrape down sides as necessary.

Grease 8 inch cake pan. Line with parchment and grease top of parchment. Bake 20 minutes till the center is barely set. Remove from oven and cool on rack. Make ganache.

Melt chocolate chips and cream in microwave, about one minute on high. Stir till smooth and chips are completely melted. Pour on cooled brownies. Let chill in fridge.

Before serving, place brownies in the freezer for at least 30 minutes for easier cutting. Let slices come to room temperature before serving.

Upon first seeing this I thought it was going to be a flourless chocolate cake. In actuality, I think this would be even better and definitely easier to make! It looks so decadent!
