Preheat oven to 400 degrees F. Spray a large jelly roll pan (half sheet pan 18"x13") with nonstick cooking spray.
Add 1 pound asparagus, remove woody ends (about 1.5 inches off the bottom) and then cut in half, 1 pint cherry or grape tomatoes, cut in half, 4 cloves garlic, minced, 1 large shallot, sliced, 1 Tablespoon olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper to the sheet pan. Toss until evenly coated and lined in a single layer. Roast for 5 minutes.
When done, add 1 ½ pounds large uncooked shrimp, ¼ teaspoon red pepper flakes, 6 Tablespoons butter, cubed, 1 teaspoon fresh lemon zest, ½ teaspoon salt, and ¼ teaspoon black pepper on top of the vegetables. Drizzle remaining ½ Tablespoon olive oil over the shrimp. Roast until shrimp is opaque and pink on the outside, about 8 to 10 minutes.
Remove pan from oven and squeeze 2 Tablespoons fresh squeezed lemon juice over the top. Garnish with 3 Tablespoons chopped fresh flat leaf parsley, freshly grated Parmesan cheese, and lemon slices.
Serve shrimp and vegetables on top of 1 pound fettuccine or linguine, cooked, and spoon the melted garlic butter sauce from the pan over the top. Enjoy!
