Arrange the greens in a large bowl or a platter. Top with watermelon, cucumber, blueberries, mint leaves and onion.
In a small bowl, mix all ingredients of the lime honey dressing.
Pour on the salad.
Top with feta and toss before serving.
Serve cold as a side dish.
Notes
This salad will keep fresh (without the dressing) for 2 days in a covered container in the refrigerator. Only add dressing before serving.
You can use a different cheese if you prefer. This salad is easily customizable. The tang of the feta cheese really adds a nice balance to this salad but you could use another crumbly cheese like goat cheese or queso fresco.
I have made this with raspberries, strawberries and blackberries and it really adds a fun twist to this recipe.
