Instructions
In a medium skillet, cook and crumble the ground beef until no pink remains. Drain excess grease.
Stir in the taco seasoning water and let simmer for 3-4 minutes until it thickens. Remove and allow to cool slightly.
Slice the bottom part of the tortilla with a knife to create a flap.
Divide tortilla into 4 triangles. Add taco meat to one section, cheese to the other, onion to the next and freshly diced tomatoes to the last section. You will use about ½ cup taco meat, ½ cup cheese, ¼ cup tomatoes and onion.
Grabbing the cut part of the tortilla, fold the cheese section onto the beef section. Then fold that section onto the onion portion. Lastly, for the final bit, fold that large section onto the tomatoes. You will have a triangle shape with four pockets when you are done.
In a medium skillet, spray with nonstick spray or add tablespoon of butter (for more flavor.) Place the tortilla triangle and cook on medium heat for 2-3 minutes per side, or until the cheese melts and the tortilla browns slightly.
Continue with remaining quesadillas. Remove, serve with your favorite toppings and enjoy!
Notes
You'll want to use the large burrito-sized tortillas for these.
Use any kind of tortilla flavor that you like, white, wheat, spinach, sun-dried tomato, low carb, etc. There are a lot of options these days.
You can top these with any ingredients you like. Some other options include: avocado, queso fresco, black beans or cilantro.
This would also be good with taco seasoned chicken!
You can easily double this recipe to make more, depending on how many people you are serving.
You can use any cheese that you like for this recipe! Pepper jack is a good cheese to use if you want a kick of spice.
