This Easy Chicken and Bisquick Dumplings recipe is full of flavor and can be made in about 30 minutes. A creamy broth, tender chicken and fluffy dumplings!
Place a large pot on stove over medium high heat, add 1 pound chicken tenders, diced, ½ onion, finely diced and 32 ounce container chicken stock.
Cook until onions turn soft and chicken is cooked.
In a small bowl, whisk together 1 packet chicken gravy mix and 1 cup milk.
Pour gravy mix into pot. Stir and bring up to a boil (to thicken slightly).
Add 1 cup frozen peas and carrots (if using) and stir.
In a medium bowl, combine 2 cups Bisquick baking mix with 2/3 cups warm water. Stir until combined.
Drop tablespoonfuls of prepared mix into the pot, spacing dumplings as evenly as you can.
Cover pot tightly and reduce heat to medium low. Steam dumplings 8-10 minutes until puffy and no longer doughy in the middle.
Season mixture with salt and pepper, to taste. Remove from heat and serve.

For a creamier chicken and dumplings, use a can of cream of chicken soup instead of the chicken gravy packet. All the other ingredient measurements remain the same, including the milk.
Chicken and Dumplings don’t always make the best leftovers. The dumplings will continue to absorb the liquid so when you make this, be sure you’re going to eat it all the same day.
Also, if you'd like, you can use some rotisserie chicken in this which gives it a wonderful flavor or if you have leftovers from a roasted chicken.
