Slice one loaf French or Italian Bread into 1- 1 ½ inch thick slices
Add 1/2 cup (1 stick) unsalted butter, softened to room temperature, 1 Tablespoon minced garlic, ¾ teaspoon salt , ¼ cup grated parmesan cheese and a little of the chopped parsley to a medium bowl.
Mix everything together and set aside.
Prepare a large baking sheet with parchment paper. Butter both sides of the bread and place them on the baking sheet.
Add 2 cups shredded mozzarella provolone mix and ¼ cup full fat mayonnaise to another medium bowl and stir to mix. It will be thick and clumpy but do your best to get it stirred together.
Add about one generous Tablespoon of the cheese mixture to the top of each slice and use a knife to press down and spread the cheese mixture evenly over the slice.
Bake for 13-15 minutes or until the cheese is bubbly and melty and begins to brown.
Add chopped fresh parsley for garnish (optional) and serve with your favorite marinara sauce.
