Preheat the oven to 425°F. Line a sheet tray with parchment paper.
Place the 8 slices garlic Texas Toast on a baking sheet and cook on the middle rack for 5 minutes.
Flip the toast over and cook for an additional 5 minutes or until the edges are a little crispy. You do not want the bread to be soft.
While the toast is baking, stir together 1/4 cup mayonnaise and 2 Tablespoons dijon mustard in a medium-sized bowl.
Once cooked, remove the toast from the oven. Press in the center of the toast with the back of a spoon.
Spread the sauce evenly on top of each slice.
Tear the 1 pound thinly sliced ham into pieces and add to the toasts.
Place a piece of cheese on top, you may need to tear it to fit.
Place back into the oven for 4-5 minutes or until the cheese is fully melted.
Sprinkle a little dried parsley on top of desired and serve.
