2cupsdiced cooked chicken(I used a rotisserie chicken)
½poundbacon, cooked and crumbled(divided use)
sliced green onion(for serving)
Instructions
Preheat oven to 350F degrees. Spray a 2.5 quart baking dish (can also use a 9x13-inch) baking dish with nonstick cooking spray.
In a large bowl, mix together 8 ounce block cream cheese, softened to room temperature with 1 cup mayonnaise and 1 cup milk.
Add 32 ounce bag frozen diced hash brown potatoes and 1/4 cup (1/2 stick) salted butter, melted and cooled slightly and stir well.
Then add to the bowl, one cup shredded triple cheddar cheese mix, 1 ounce packet ranch seasoning mix, 1 teaspoon onion powder, 1 teaspoon garlic powder, 2 cups diced cooked chicken and half of the cooked bacon. Stir well.
Pour mixture into the prepared baking dish.
Cover with nonstick aluminum foil and bake for 30 minutes.
Remove from the oven and add the remaining one cup shredded triple cheddar cheese mix and remaining cooked bacon.
Cook for an additional 20-30 minutes (or until hash browns are fully cooked and mixture is bubbly around the edges.) Note: oven times can vary so please go by doneness not just time.
Serve topped with sliced green onion and enjoy!
