Biscoff Ice Cream Sandwich Cake is an easy no-bake frozen dessert made with layers of ice cream sandwiches, cookie butter, whipped topping, and crushed Biscoff cookies.
In a large mixing bowl, fold together one tub of whipped topping, ¾ cup Biscoff cookie butter,1 teaspoon vanilla extract, and 10 Biscoff cookies, crushed until combined.
Arrange a layer of ice cream sandwiches in the bottom of a 9x13-inch baking dish, cutting sandwiches as needed to fit evenly.
Spread half of the Biscoff whipped topping mixture over the ice cream sandwiches.
Add another layer of ice cream sandwiches on top.
Spread the remaining Biscoff mixture evenly over the second layer.
Add a final layer of ice cream sandwiches (pressing down gently if necessary)
Spread an additional layer of whipped topping (from the second tub) over the top (note: you can use as little or as much as you like from that second tub)
Warm the remaining ¼ cup Biscoff cookie butter in the microwave for 15-20 seconds until pourable, then drizzle over the top. Use a knife or toothpick to gently swirl it into the whipped topping.
Sprinkle crushed Biscoff cookies over the top (note: if you want these to stay crunchy, don’t add them until ready to serve.)
Cover tightly and freeze for at least 6 hours or overnight before slicing and serving. Enjoy!
