Preheat the oven to 350°F and line a sheet pan with parchment paper.
In a large mixing bowl, combine 2 pounds ground beef, 8 slices bacon, cooked and crumbled (reserve a bit for the topping), 1 cup shredded colby jack cheese, 2 large eggs, 1/2 cup panko breadcrumbs, 1/4 cup mayonnaise, ¼ cup pickles, roughly chopped, ¼ cup ketchup, 2 Tablespoons mustard, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon seasoned salt and 1 teaspoon pepper. Transfer the mixture to the sheet pan and shape it into a loaf.
In a small bowl, combine ½ cup ketchup and 2 Tablespoons mustard for the topping. Brush this ketchup mixture over the top of the meatloaf.
Bake for 1 hour. Then, sprinkle 1 cup shredded cheddar cheese and bake for an additional 10-15 minutes until the meatloaf reaches an internal temperature of 165°F. Top with reserved bacon.
Allow the meat to rest for 5-10 minutes before serving.
