This recipe for Air Fryer Steak Fajitas features sliced New York Strip steak, peppers, onions, and seasonings all stuffed into tortillas and served with a quick homemade chipotle cream sauce!
First, make the chipotle cream sauce (is using). Add 1 cup sour cream, 2 Tablespoons chipotle sauce, 1 teaspoon granulated sugar, 1/2 teaspoon smoked paprika, 1/4 teaspoon kosher salt and 1 lime, juiced. Mix until combined. Cover and place the sauce in the refrigerator until ready to serve.
In a bowl add 1 pound New York strip steak, sliced 3 inches long - against the grain, 2 green bell peppers, sliced, 2 red bell peppers, sliced, 1 yellow onion, sliced, 2 Tablespoons oil and 1 lime, juiced. Toss until coated.
Sprinkle 1.25 ounce packet fajita seasoning on top. Toss until coated.
Preheat the air fryer for 5 minutes to 400°F. Note: This can be cooked immediately or can be marinated for up to 1 hour.
Remove the steak and add the peppers and onions only to the air fryer. Cook for 5 minutes. Shake the peppers and onions in the air fryer basket.
Then add the steak to the air fryer Cook the steak and peppers for 5 to 10 minutes (depending on how you like your meat cooked - see notes below).
Serve the fajitas on the tortilla shells. Top with prepared chipotle cream sauce and cilantro.
Optional: Serve with 8.5 ounce packet cilantro lime rice (prepared to directions on the back of the packet.)

Air Fryer cooking times can vary greatly depending on the kind and style of air fryer being used. When cooking meat, always go my the internal temperature of meat (not just cooking time) to ensure doneness. The USDA recommends cooking steak to at least 145F degrees. Here are some estimates only:
Medium-Rare: Cook for about 5-6 minutes (130-135F degrees)
Medium: Cook for about 7-8 minutes (140 - 145F degrees)
Medium-Well: Cook for about 9-10 minutes (150-155F degrees)
