Weekend Potluck #56


Hi Friends! Welcome Back to another Weekend Potluck!
As always, we are so happy to have you here.

But for everyone else, y'all know I like to take a minute to gab with ya and sometimes share a bit about my week.  So, the big news was we went on a mini-vacation.
And by mini, I mean Minnie. As in Minnie Mouse.
We took 3 days off and flew down to Florida. 
And went to Disney World!
This is our first vacation in probably over 10 years. 
It was a very short one but we will take what we can get!
We only had one day to do Disney so we chose to do Magic Kingdom.
You gotta see the castle, right?
The weather was gorgeous and we had so much fun.
 I cannot tell y'all how good that warm air felt.
For those of you who don't know, I have an autoimmune disorder.
Most days I get through just fine but some days can be a struggle.
I won't bore y'all with the laundry list but exhaustion is pretty high up on that list.

One of the many symptoms of this disorder is something called Raynaud's Disease.
When I'm cold, my fingers and toes turn blue.
It is a regular, everyday occurence. I can just be in a cool room and they will be blue.
It is frustrating to say the least. But for 3 blissful days, I had no blue fingers or toes - not once!

 On our second day there we went over to Kennedy Space Center.
Alex has a fascination with robots, rocket ships and space.
For the last few years he has said he wants to be a scientist when he grows up.
So this was a must-see for us.
The IMAX theater there was amazing.  The last time we were there was 16 years ago and
 I was in awe by how much it had grown and changed.
Right before we left, we managed to make a short visit to the beach at sunset.
 Next time we are able to go, I think we will just spend the whole time at the beach.
Out of all the places we went, this was the most peaceful.
Not a lot of people were there and we just relaxed.
Oh how I could have used just a bit more time there. 
I hope it won't be another 10 years before our next vacation!
Okay, now that we all have warm weather on the brain, let's get on to some yummy food.

So glad to hear about your fun vacation, Alex looks like the perfect age to really enjoy Disney! We have plans to take our 3 grandchildren this summer and they are excited. Didn't know about your autoimmune issues, so sorry! I had to retire early because of autoimmune illness, so I know about the fatigue! Hang in there!

So glad y'all had a wonderful time! I can certainly relate, I also have Raynauds, among other things. I live in north Florida so not quite so warm here as Orlando. When mine flares I say I'm so patriotic cause my hands turn red, white and blue! Get some rest but try to keep those amazing recipes coming!

Looks like you all had a blast at Orlando and my favorite beaches on the space coast. I'm in Tampa now but was raised in Merritt Island and won't go to the beach unless its there. I love your hair you're so pretty! I've made so many recipes from your blog. Keep em coming.
