Cherry Chocolate Biscotti ~ The Farmer's Wife

It's Wednesday and that means guest blogger day - yay! I have just been so thankful for the gals who have been guest blogging here on The Country Cook these past few weeks.  They have all become special friends to me and they really have pulled out all the stops and brought some amazing recipes to share.
I am so thrilled to introduce you to our next guest. 
Her name is Kim and she writes for her blog, The Farmer's Wife.  

Y'all, Kim is a hoot and a half.  She writes exactly how she talks so you really get a sense of who she is and how she cooks. She is funny and sweet, just like your best girlfriend. Kim cooks and bakes all types of foods and desserts and at the end of all her posts she gives a star rating based on how she and her family enjoyed that particular dish (5 stars means it was phenomenal). But mostly, Kim prepares family-friendly food that her hardworking husband and adorable toddler are sure to love.  I just know y'all are going to love Kim and all her recipes too.
Today she is sharing an original recipe that she hasn't even posted on her own blog yet.
I feel so honored that she is sharing it with all of us here today. Take it away Kim!

I'm so excited to share with you today, but before I get to cookin' let me introduce myself! I'm Kimberly a.k.a The Farmers Wife. I'm a coffeeholic, stay at home Mom and Wife, and yes I am actually married to a Farmer. 

Life is very interesting as a Farmers Wife, (if you'd asked me 10 years ago if I would be married to farmer I would've said absolutely not! I was a city girl at heart. But I love every moment of it. I've never had better produce to cook with in my life, and my Hubby is such a great inspiration for me. My little Sous Chef (my son) is also a big part of my life and blog. He is definitely a big inspiration to me as he is always coming up with ideas for treats he thinks sound good, and he loves to help out in the kitchen. 

I started The Farmers Wife a couple of years ago because I love to cook, and inventing my own recipes even more, but I was always forgetting to write them down. For me it was a hobby, and a resource for myself and family, then about 8 months ago things started to change. People I didn't know started following and liking my recipes, and before I knew it was meeting new foodie friends like Brandie! And that brings us to today! Now enough about me, let's get to FOOD!!!

When Brandie first asked me to guest post for her, I was blown away. Not only was I honored, but my zany brain started going a mile a minute with different recipe ideas swarming around my head like annoying bee's in the summertime. After a few days of deliberation I finally got to thinking, what is something that Brandie would enjoy... You see Brandie is the type of friend that you could just sit and inhale a cup of coffee with, while gabbing each others ears off and having a blast all at the same time. Sometimes I think our Hubby's should be glad that we don't live in the same state, since this would likely be a weekly occurrence and neither one would get fed that night. hehe! Anyway, I decided to create a nice little snack for Brandie and I to enjoy for our "Virtual Coffee Date!" and these Cherry Chocolate Biscotti were born! (Recipe's are like babies so you know, you gestate on them for a time, go thru the labor of creating them, and then you gain a ton of weight!).

 I have to say these babies were pretty darn easy to make, and man are they tasty! (I should know... I've eaten 4 already... haha!!) I've long loved the combo of cherry and chocolate, and probably don't bake with it often enough for my liking, but I am so glad to be able to share these with you all, and I hope you enjoy them for your next "Coffee Date", and glad you can join in on ours today!

Cherry Chocolate Biscotti
Farmers Wife Original Recipe

3 1/4 cups All Purpose Flour
1 Tablespoon Baking Powder
4 Eggs
2/3 cup Vegetable Oil
1 teaspoon Almond Extract
1 cup Sugar
5 oz. package Dried Cherries
1 cup Dark Chocolate Chips
3 Tablespoons White Chocolate Chips


Preheat the oven to 375° F, and line a cookie sheet with parchment or wax paper. In a large bowl, whisk together flour and baking powder. Add in the Cherries, Dark and White chocolate and toss in the flour mixture (this will prevent them from sinking to the bottom of the dough). In a medium bowl whisk together eggs, oil, sugar and almond extract. Add to the flour mixture and mix well. The dough will be stiff, and sticky, you may want to use your hands. Once mixed, divide the dough in half, and form into 2 log's on the cookie sheet the length of the pan, flattened slightly. Bake the logs for 25-30 minutes until golden and firm. Let cool about 30 minutes, then slice with a serrated knife into 1/4-1/2 inch thick slices. Arrange on cookie sheets and bake again for about 10 minutes, flipping halfway through to brown up the edges. Let cool and serve with coffee, tea or hot chocolate. These will keep for about a week in an airtight container.


I always do a review at the end of my recipes, and I have to say this gets 5 stars. They have an amazing flavor with the almond extract and the cherries. I personally like mine with a big cup of coffee, and they soften up a little when you dunk them and they become just delectable!

Let's be honest, I wouldn't even need coffee to have an excuse to eat these!

  2. I have dreamt about what it would be like to live on a farm and have fresh produce and meats. My guy grew up in the corn fields of Ohio and hearing him talk about fresh sweet corn leaves me daydreaming about us someday moving back to his hometown. Sigh. Kim, these biscotti sound delicious and I would most definitely like to enjoy one of these with my coffee right now! Yummy!
