Use three medium plates to begin setting up your stations to prepare the fish sticks for frying.
For the first station, combine the flour, salt and pepper. Mix thoroughly.
For the second station, beat together two eggs and hot sauce.
For the third and final station, combine the breadcrumbs with paprika and garlic powder. Mix until all ingredients are well combined.
Take each slice of halibut and coat evenly and heavily with the flour mixture. Cover all sides .
After your sticks are coated with flour, submerge them in the egg mixture. Make sure to allow the mixture to cover the entire stick before removing.
Lastly, add the sticks in the bread crumb mixture, covering entirely.
Place each fish stick in the air fryer and cook for 15 minutes at 325F degrees.
Half way during the cooking time, open the air fryer to flip sticks on the other side. Return to the air fryer and cook the remaining time.
When cooking time is complete, remove from the air fryer and serve immediately.
Notes
If you can't find halibut (or want a cheaper option), cod filets will work.
Make sure you flip these halfway through the cooking time to make sure they brown and cook evenly.
These cooked fish sticks can be stored in an airtight container or zip top bag in the refrigerator for 3-5 days. They can also be frozen. Store in a freezer safe sip top bag in a single layer. They will keep frozen for 3 months.
