Ingredients
2
pounds
ripe tomatoes
deseeded and finely chopped
1
onion
peeled and finely chopped
1
small jalapeño or serrano pepper
deseeded and finely chopped
3-4
Tablespoons
lime juice
4
Tablespoons
chopped cilantro
salt and black pepper,
to taste
Instructions
Add all the ingredients to a mixing bowl.
Mix until well combined.
Let stand for 10 minutes so the flavors combine. Adjust seasoning before serving.
Notes
Make sure to use ripe tomatoes for the best taste. I prefer Roma or vine ripened tomatoes.
You could add in chopped bell peppers for extra crunch.
This goes very well with tacos, nachos, tortilla chips, burritos,
quesadillas etc.
Add this to mashed avocado for a deliciously fresh guacamole.
This is best if you let it sit about 10 minutes for the flavors to combine.
You can easily double this recipe to serve more people or have more on hand.
We like to garnish with some lime slices, this is optional.
