Moist layers of chocolate cake filled with buttercream and topped with sprinkles, this Homemade Guinness Chocolate Cake is a delicious chocolate indulgence.
In a medium bowl, combine the flour, cocoa powder, and baking powder, stirring to mix the ingredients, and then set the bowl aside.
In a large mixing bowl, or using a stand mixer, beat the sugar and butter together.
Add in the egg, milk, and vanilla, mixing on medium speed for about 30 seconds.
Add the flour into the batter, and continue mixing until the batter is smooth and creamy. The cocoa powder should be evenly mixed into the batter, so scrape the sides of the bowl with a spatula to be sure it has all been incorporated.
Stir in the stout, mixing it into the batter.
Lightly spray two 8 inch round baking pans, and then evenly divide and pour the batter into each pan. Bake for 23-25 minutes, using a toothpick to test if the cakes are completely baked in the center.
Once they have finished baking, remove from the oven and let cool before frosting.
Frost as desired.
Notes
I use (2) 8" round cake pans for this recipe as it creates the height of cake that I like. If you want a shorter cake you can make it in (2) 9" cake pans.
Make sure you spray your pans well. I like to use round cake pan liners on the bottom, it helps the cake release easily. In addition, I use Baker's Joy nonstick spray. It has flour in it and is perfect for baked goods.
Gently tap your cake pans on countertop before baking, this helps release any air bubbles within the batter.
