Preheat oven to 375F degrees degrees. Dice apple, and mix with cinnamon, brown sugar, vanilla, and lime juice until evenly coated.
Open cinnamon rolls, and roll each out until you have a flat disc. Set aside icing for later.
Spray a muffin tin with nonstick, then push a cinnamon roll into each cup - make sure to press around the sides so they form their own cups. Add a generous spoon full of apples to each one.
Bake at 375F degrees for 10 minutes (or until rolls are golden brown and cooked through). If you like your apples super soft you can cover the muffin tin with aluminum foil first before baking. Then add a couple minutes to the cooking time.
Once done, drizzle with icing that was set aside from the cinnamon rolls. Serve warm!

You can use any type of apple for these. I like to use a more tart green apple like Granny Smith or Golden Delicious. We aren't baking these for a long time so you could certainly use a Fuji or another sweet/tart apple that you enjoy and they should do fine.
You can substitute with apple pie filling for the fresh apples.
If you like your apples super soft, you will want to to put the apple filling in a sauce pan and meat it up over medium heat for about 8-10 minutes before filling the cinnamon roll cups.
