Heat 1 Tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground mild Italian sausage. Cook and crumble until browned, about 5 to 8 minutes. Drain excess grease. Turn heat down to medium.
Add 1 small yellow onion, diced and 2 cloves garlic, minced and cook until onions begin to soften, stirring occasionally.
Add 14.5 ounce can fire-roasted diced tomatoes, undrained, 1 cup heavy whipping cream, ½ cup chicken broth, ½ teaspoon kosher salt, ¼ teaspoon pepper and 9 ounce package refrigerated cheese tortellini. Stir to coat and simmer over medium heat (uncovered) until the sauce has reduced and the tortellini is cooked through, about 5 to 7 minutes.
Serve topped with ¼ cup chopped basil and ¼ cup shredded parmesan cheese. Enjoy!
