This fruit salad tastes just like summer! With a variety of juicy, fresh fruits and an amazing honey lime dressing, it will be the star of your summer BBQ!
Wash mandarin oranges, cut both ends, cut the skin from top to bottom then unroll. Remove strings, separate wedges and add to a large bowl.
Cut watermelon in bite-sized cubes and add to the bowl.
Cut kiwis in half, slice, then add to the bowl.
Cut pomegranate in half, the seed part must face the palm of your hand. Use a spoon and smash the skin of the pomegranate. Seeds will fall in your hand. Make sure to do this over the fruit salad bowl so you don't lose any. Do the same with the other half.
Add blueberries and mint leaves to the bowl and mix.
Leave in the bowl or transfer fruit salad to a large plate to serve.
In a separate small bowl, whisk together the honey and lime juice. Pour this dressing over fruit just before serving. Lightly toss together.
Notes
You can use any mixture of fruit that you like for this salad such as bananas, raspberries, blackberries, cantaloupe, strawberries, grapes and more.
You can use canned fruit wherever possible. Canned mandarin oranges work perfectly well in this recipe.
Some stores offer already cut up fruit like watermelon, cantaloupe and pomegranate seeds. I will do this often when I am trying to whip this up quickly.
The lime juice in this recipe actually helps to keep the fruit looking its best for a little longer. Citric acid that is found in fruits like lemon and limes help keep fruit lighter and brighter for a bit longer. Keep it cool when possible.
You are definitely going to want to double this recipe if you plan on bringing it to a gathering.
