These Oreo Cheesecake Brownies are packed full of delicious chocolate, cheesecake and layers of Oreo cookies. Only a few ingredients and layers of flavor!
Spray a 9x9 baking pan with non-stick spray and then line with parchment paper.
Prepare the brownie mix according to package directions and pour into the prepared pan.
Place 16 cookies (4 rows of 4) on top of the brownie mix, set aside.
In a medium size bowl, beat the cream cheese, sugar and vanilla until fluffy. Add the egg and beat just until mixed.
Add the flour and mix just until combined.
Spread the cream cheese mixture on top of the cookie layer.
Crumble the remaining 4 cookies and sprinkle on top of the cream cheese mixture along with the chocolate chips.
Bake for 45-50 minutes until edges are slightly browned and pulling away from the sides. A toothpick inserted in the center should come out with a few moist crumbs.
Remove the brownies from the oven and allow to cool completely before cutting into squares.
Notes
You can use any brownie mix that you like. I prefer the fudge brownie mix. This is just a standard size boxed mix not the one that is for a larger 9"x 13" baking pan.
If you want a different flavor, you can use other flavored Oreo cookies. Golden Oreos would be a fun option!
I use the semi-sweet chocolate chips as I think it balances the overall sweetness of the brownies. But you can use any kind that you like, white chocolate, milk chocolate or dark chocolate.
These brownies are meant to be really fudgy and moist in the middle. If you want them to be more cake like then bake about 5 minutes longer.
These need to cool completely before cutting. The cheesecake layer needs time to fully set up.
Try not to over mix the eggs in the cheesecake layer. Doing so will cause the cheesecake to crack.
