This Easter Bunny Poke Cake is poked with Jell-O, topped with a fun whipped "grass" frosting and topped with bunny Peeps and Cadbury eggs. A fun, flavorful Easter cake!
Preheat oven to 350F degrees and prepare a 9"x 13" pan by spraying generously with non-stick spray and set aside.
Prepare the cake according to box instructions and bake approximately 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to cool for about 15 minutes on a wire rack, then use a large straw or the end of a wooden spoon to poke holes all throughout the cake.
In a bowl, stir together the boiling water and Jell-o powder and mix until the powder is completely dissolved. Use a spoon to fill the holes in the cake with the Jell-o.
Place the cake in the refrigerator for at least 2 hours to allow the Jell-o to set.
Meanwhile, prepare the whipped topping by adding the heavy whipping cream into the bowl of a stand mixer equipped with a whisk attachment. Whip on high speed until soft peaks form. Add in powdered sugar, vanilla, and green food color and mix until combined. Add more green color if desired.
Once you get desired color, whisk on high speed until stiff peaks form and the frosting starts to clump in the whisk.
Add the topping into a piping bag fitted with a Wilton #233 tip. Hold the piping bag vertical above the cake and apply gentle pressure to pipe while releasing pressure and pull the bag away from the cake to create a grass effect. Continue to cover the entire top of the cake.
Add 12 bunny peep marshmallows 3 down and 4 across the cake and add 2 mini Cadbury eggs per bunny. Sprinkle with your favorite easter sprinkles and serve!
Notes
I use a boxed white cake mix for this recipe but you can also use yellow or French vanilla. Or you can make a homemade cake.
You can find mini Cadbury chocolate eggs at your local grocer usually down the seasonal aisle. If you can't find them, M&M's make mini chocolate Easter eggs or you can swap for pastel colors M&M's, if desired.
I used a Wilton #233 tip to pipe the grass frosting on top.
You can use liquid, gel or paste food coloring for this recipe. I think gel or paste food coloring (in Kelly Green) will give you the richest color.
Any shape peeps will work for this cake but the bunny themed ones are what make it a little cuter!
Use any flavor of Jell-o that you would like. I think a pink colored Jell-o (like watermelon or pink Starburst flavor) would look cute with this too.
