Spray a 9"x 13" baking dish (or a cookie sheet) with nonstick spray or line with parchment paper. Set aside.
In a large bowl, mix all the cereal and mini marshmallows. Set aside.
In a microwave-safe bowl, melt white chocolate chips in the microwave at 30 second intervals at 50% power, stirring each time, until melted.
Add melted white chocolate to the cereal bowl. Using 2 spoons, mix it all together until all the cereal is coated. Like tossing a salad.
Transfer to the prepared 9"x 13" dish. Spread the mixture as evenly as possible.
Sprinkle the top with Christmas sprinkles and mini chocolate chips.
Cool in the refrigerator for 20 minutes to allow the chocolate to set. Break in pieces and serve.
Notes
Mini M&Ms can be added for more color, and, of course, for more chocolate!
Any combination of your favorite sweet cereal will work with this recipe.
When melting chocolate in the microwave, it's helpful to melt at only 50% power to ensure the chocolate does not burn. You can add 1 tsp of oil if you want to have the chocolate to be thinner.
Using a couple of big spoons to coat the cereal with the chocolate allows you to do it while it is still warm to the touch and easier to spread. Just toss it quickly, like a salad.
By cooling the mixture in refrigerator for 20 minutes, it allows the chocolate to set faster but it's not necessary if your house is cool enough.
Store the finished white chocolate mix in an airtight container or a ziploc bag. Keep it at room temperature or in the fridge. It should last for about 2 weeks if stored in an airtight container.
I do not recommend freezing this mix since it will not thaw at a good consistency.
