  • 5 Johnsonville Italian Mild Sausages
  • 2-3 tbsp olive oil
  • 1 small onion, diced
  • 2-3 tsp minced garlic
  • 1 1/2 tsp salt
  • 1 tsp. black pepper
  • 1 tbsp Italian seasoning
  • 2 15 oz cans white beans (do not drain or rinse)
  • 1 15 oz can fire roasted diced tomatoes with garlic
  • 1 32 oz carton chicken stock
  • 1 20 oz package refrigerated cheese tortellini
  • 1/2 cup heavy cream or milk
  • 5 oz. baby spinach, optional


  • Cook sausages in Johnsonville grill - slice when finished cooking.
  • In a large pot over medium heat, heat oil. Add onion and cook, stirring, until soft, about 5 minutes. Add in minced garlic and cook for an additional minute. ┬áSeason with salt, pepper and Italian seasoning.
  • Stir in white beans, diced tomatoes, and chicken stock.
  • Bring to a gentle boil and add tortellini and sliced sausages.  Reduce heat to medium-low and simmer until tortellini is cooked and flavors start to meld, 18 to 20 minutes.
  • Stir in heavy cream, cook for an additional 5 minutes.
  • Finally, stir in spinach and cook until spinach has wilted, about 2-3 minutes. Taste-test soup for any additional seasoning (careful - it's hot!) and add in additional salt, pepper or Italian seasoning, if necessary.
  • Serve with freshly grated Parmesan cheese.
