This Ham, Cheese and Peach Tortellini Pasta Salad only has a handful of ingredients but is a knockout of flavor. It's all combined with chopped lettuce and a creamy poppyseed dressing. Perfect for lunch, brunch or as a side dish at a barbecue.
116 ozblock cheesediced into small chunks (or cubes)
2cupschopped lettuce
Instructions
Prepare cheese tortellini according to package directions.
Drain tortellini and rinse with cool water just to cool it off slightly.
In a bowl or a mason jar, combine poppyseed dressing with 4 tbsp. of the juice from the can of peach slices. Then drain the rest of the juice from the peaches. If preferred, slice the peaches in thirds to make them more bite-sized.
Stir dressing together well. Or if you are using a mason jar, screw the lid on and give it a good shake.
In a large bowl, combine cooked tortellini, diced ham, cubed cheese and sliced peaches.
Then pour poppyseed dressing over salad. Give it all a good stir.
Finally, stir in chopped lettuce and gently stir.
Serve immediately. Or cover with plastic wrap and pop into the fridge to serve within 24 hours.
