Crock Pot Creamy Fingerling Potatoes

These Crock Pot Creamy Herbed Fingerling Potatoes are absolute perfection. A side dish that is super easy to make but packs lots of flavor with a few herbs!

Ingredients

  • 1.5 pounds fingerling potatoes
  • 3 Tablespoons salted butter, melted
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1 cup shredded white cheddar cheese

Instructions

  • Slice fingerling potatoes in half, lengthwise.
  • In a 4-quart slow cooker, toss cut fingerling potatoes with melted butter.
  • Season potatoes with salt, parsley, rosemary, thyme, dill, garlic powder and black pepper.
  • Stir.
  • Then cover and cook on low for 4 hours or high for 2 hours.
  • After cooking, stir in heavy cream and shredded cheese.
  • Cover and cook on high for an additional 15 minutes until warmed through and cheese is melted.

Notes

  • Other small potatoes may be used if you can't find fingerling potatoes. A small yellow/gold potato would work nicely.
