Preheat grill to medium high. Heat 1 teaspoon olive oil in a nonstick skillet (or medium pot) over medium heat. Add onions and corn then sauté for 3 minutes. Add garlic and salt, sauté for 1 minute more then remove skillet from heat.
Stir in lime juice and BUSH's Southern Pit Barbecue Grillin' Beans
Scoop out about 1-inch of insides of zucchini halves. Note: I found this easiest to do with a melon baller.
Brush remaining olive oil on cut side of zucchini halves.
Lay halves cut-side down on grill rack for 2 minutes.
Turn zucchini over and fill with bean mixture.
Top with pepper jack cheese.
Place back on grill and close the lid and cook zucchini until cheese melts. About 6-8 minutes.
