Ready in under 20 minutes, these Air Fryer Buffalo Chicken Quesadillas combine tasty buffalo chicken with everything you love about cheesy quesadillas!
In a large bowl, mix together the shredded chicken, buffalo wing sauce, and ranch dressing until combined. .
Place ¼ cup of the chicken mixture on half of each tortilla.
Sprinkle each quesadilla evenly with ¼ cup of shredded cheddar cheese and 1 Tablespoon of crumbled blue cheese.
Fold over the tortilla and place the quesadillas (2 at a time) in a 5-6 quart basket air fryer. Spray the tops with a bit of nonstick olive oil spray.
Cook the quesadillas for 4 minutes at 350°F. Flip the quesadillas over, spray again with a little olive oil nonstick spray and cook for an additional 4 minutes until crisp and cheese has melted.
Continue with the rest of the quesadillas. Then cut each quesadilla in half to make 16 triangles. Top with chopped cilantro.
Serve immediately with ranch or blue cheese dressing on the side.

The air fryer does not need to be preheated. However, you may have a style of air fryer that requires preheating so do that first if necessary.
I prefer olive oil nonstick spray as it is less likely to gunk up your air fryer basket over time like other nonstick sprays.
This could take a slightly longer in your air fryer so please use your best judgment on how well done you like your quesadillas.
You can freeze these premade or after you air fry them.
Leftovers should be stored in a ziptop bag in the fridge and can be kept for a few days.
