Sweet Holiday Chex Mix

Ingredients
Dry Mixture:

cups
corn Chex cereal
4
cups
rice Chex cereal
4
cups
wheat Chex cereal
2
cups
sweetened shredded coconut
(optional)

pecan halves
Syrup Mixture:
1
cup
salted butter
1
cup
light corn syrup
½
cup
granulated sugar
½
cup
light brown sugar,
packed
1
teaspoon
vanilla extract
Instructions
Line a large baking sheet with parchment paper (or nonstick aluminum foil) , set aside.
In a very large mixing bowl, combine the corn Chex, rice Chex, wheat Chex, coconut and pecan halves and set aside.
In a medium saucepan, melt the butter over medium low heat. Then add in the corn syrup, granulated sugar, light brown sugar and stir to combine.
Bring to a boil over medium heat and continue to boil for 3 minutes, stirring constantly.
Remove from heat and stir in the vanilla extract.
Pour the syrup over the dry mixture and stir to coat.
Spread the mixture onto the prepared baking sheet and let cool. This mix does not need to be baked.
After cooling, break the mixture into smaller bite-sized pieces. Serve and enjoy! Store leftovers in an airtight container.
Notes
Other nuts can be used: walnuts, almonds or macadamia nuts.
Coconut is optional.
You can make the glaze with unsalted butter. Just add 1/2 teaspoon of salt to the brown sugar/butter mixture.
