This Christmas Tree Fruit Pizza has a cookie crust, green whipped cream and is covered in all your favorite fruits! Perfect for the holiday dessert table!
Preheat the oven to 325 degrees F. Line a large baking sheet (10x15-inch) with parchment paper, set aside.
Open the package of sugar cookie dough and break up the roll into pieces and allow the dough to warm up slightly to make it easier to work with.
Roll the cookie dough into a ball, then sprinkle flour onto the prepared baking sheet and on top of the cookie dough.
Using a rolling pin, roll the cookie dough out flat. Create a triangle shape by using your hands and gently pushing the outsides of the dough inwards. Create the tree shape by pinching in a section close to the top and then again in the center of the dough. Make sure to work slowly and use more flour as you go or the dough will become too sticky.
Make sure the cookie dough is rolled out to about ½-inch thickness, then check that there are no tears in the dough. If there are pinch them back together as well as you can.
Place in the oven and bake for about 18-20 minutes or until set.
Remove the cookie from the oven and allow it to cool on the pan completely before carefully transferring it to a wire rack.
While the cookie is cooling, make the whipped cream.
In a large bowl with a hand mixer, beat the heavy cream until soft peaks form. Then add the vanilla, powdered sugar and green food coloring and beat until you get stiff peaks.
To frost the cooled cookie, use an offset spatula, spread the whipped cream over the top.
Pat dry the fruit as well as you can to get out as much liquid as possible, then place the fruit on top of the whipped cream in a pattern of your choice. Slice and enjoy!
Notes
You can make your own homemade sugar cookie dough.
Other fruits can be used. Try not to use ones that brown quickly.
Other frostings can be used such as a cream cheese or buttercream. Store bought frostings also work well here.
Do not over bake or the cookie will be too hard.
You want to look for the larger tube of sugar cookie dough. The packages come in 16.5 ounces and 30 ounces. Look for the 30 ounce package. If you can't find it, just buy two of the 16.5 ounce rolls. It will still work.
