Ingredients
1.5
cups
cubed watermelon
4
ounces
lemonade
4
ounces
club soda or lemon-lime soda
(I prefer Sprite or 7-Up)
ice
watermelon wedges, lemon slices and/or fresh mint, for garnish
Instructions
In a high-speed blender, blend the watermelon cubes until they are completely juiced.
Strain the juice into a large measuring cup or pitcher with a fine-meshed sieve to remove any pulp from the watermelon juice. Set aside.
Fill serving glasses with ice.
Add 3 ounces of the watermelon juice to the glass. Then add 2 ounces of lemonade.
Top up the glass with soda (club soda for a less sweet mocktail and lemon-lime soda for a sweeter drink).
Garnish with a watermelon wedge, lemon slice, and mint sprig, and serve immediately!
Notes
This can be quadrupled to make in a pitcher or punch bowl.
The watermelon juice will keep for up to a week in the refrigerator..
This can be made alcoholic, see my tips above.
