LIGHT REFRESHING SUMMER SALAD
I love fruit salads in the summer. This Watermelon Feta Salad is a mixture of various fruits, cucumbers, onions, cheese and a heavenly honey lime dressing. The different flavors really play off of one another perfectly. This is a great salad to serve to guests, have as a fresh side to a meal, or just because! If you are looking for that one special salad to make this summer, you absolutely must try this Watermelon Feta Salad!

Absolutely! This salad is easily customizable. The tang of the feta cheese really adds a nice balance to this salad but you could use another crumbly cheese like goat cheese or queso fresco.
This salad will keep fresh (without the dressing) for 2 days in a covered container in the refrigerator. Only add dressing before serving.
I have made this with raspberries, strawberries and blackberries and it really adds a fun twist to this recipe.

- fresh greens
- seedless watermelon
- cucumber
- blueberries
- mint (optional)
- red onion
- feta cheese
- oil
- lime juice
- honey
- salt & pepper
HOW TO MAKE WATERMELON FETA SALAD:
Arrange the greens in a large bowl or a platter. Top with watermelon, cucumber, blueberries, mint leaves and onion.

In a small bowl, mix all ingredients of the lime honey dressing.

Pour on the salad.

Top with feta and toss before serving.

Serve cold as a side dish.

WATERMELON FETA SALAD
Ingredients
- 2-4 cups fresh greens can be spinach, romaine lettuce or frisee or a combination of all three
- 1 small or half of a medium seedless watermelon rind removed and cut in 1” cubes
- 1 medium cucumber sliced
- 1 cup blueberries
- ½ cup fresh mint (torn into smaller pieces) optional
- ½ red onion thinly sliced
- ⅔ cup feta cheese crumbles
Lime Honey Dressing:
- 2-3 tablespoon extra virgin oil
- juice of 2 limes
- 1 tablespoon honey
- sea salt and black pepper to taste
Instructions
