Instant Pot Meatloaf (+Video)
Instant Pot Meatloaf and Garlic Parmesan Potatoes is a whole meal made right in the electric pressure cooker. Tender, flavorful glazed meatloaf and perfectly seasoned potatoes!
A COMFORTING ONE POT MEAL
This really is The Best Instant Pot Meatloaf and Garlic Parmesan Potatoes. It’s an all-in-one meal and is so simple to make. I promise this isn’t an old school dry meatloaf recipe!
FREQUENTLY ASKED QUESTIONS:
More than likely it is one of (3) things. First, the lid may not be properly sealed. If that little sealing ring isn’t on the underside of the lid just right, the lid won’t seal. Second, it could be that you don’t have the pressure release valve set to “SEAL.” This has happened to me more than once. Lastly, it could be that you don’t have enough liquid in your pressure cooker. You need at least a cup of liquid. Also, be sure you aren’t overfilling your pot. Don’t go above the line provided on the insert of your Instant Pot.
I tested this recipe using the Instant Pot brand pressure cooker. Some folks have suggested that the brands of pressure cookers they own are different from the Instant Pot and require more cooking time. So having said that, please use your judgement based on your knowledge of the electric pressure cooker that you own.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)
- baby potatoes
- chicken broth (or water)
- minced garlic
- salted butter
- shredded Parmesan cheese
- lean ground beef (93% lean)
- milk
- egg
- slices of bread
- Worcestershire sauce
- onion powder
- salt and pepper
- dry ground mustard
- garlic powder
HOW TO MAKE THE BEST INSTANT POT MEATLOAF:
Spray the bottom of a 6-quart electric pressure cooker (Instant Pot) with nonstick cooking spray or wipe it with a bit of butter. Add Little Potatoes into the bottom of the insert.
Pour chicken broth on top of potatoes. Stir in minced garlic.
Top potatoes with pats of butter. Place rack insert on top of Little Potatoes.In a bowl, combine all the meatloaf ingredients. It really is best to use your (very clean!) hands to mix this up. Nature’s best tools!
Place meatloaf mixture onto a sheet of nonstick aluminum foil. Shape the loaf into a rectangle and fold up the sides of the foil so it makes a little meatloaf boat (I think I’m gonna trademark that 😉 )
In a small bowl, combine meatloaf glaze ingredients and stir well.
Spread half of this glaze mixture onto the meatloaf (we’ll use the rest later). Place meatloaf on top of rack insert.
Place lid onto pressure cooker and lock it into place. Make sure the valve on the lid is turned to “Sealing”.
Set to manual high pressure for 30 minutes.
After it is done cooking, move the valve setting to “Venting” (this is called a quick release). Be VERY careful of the steam that will quickly come out. Allow all of the steam to fully release before unlocking lid.
This next step is optional: Using oven mitts, carefully remove your ‘meatloaf boat’ and place it on a baking sheet. Set your oven to “High” broil. Spread the rest of the meatloaf glaze on top of the cooked meatloaf. Then slide meatloaf under the broiler for a couple of minutes just until it starts to bubble. Meanwhile, sprinkle Parmesan cheese and some dried parsley on potatoes that are in the Instant Pot and stir.
Remove baking sheet from the oven. Carefully place meatloaf on a serving plate using a large spatula. Then, gently remove the insert from the Instant Pot (using oven mitts) and carefully drain any excess broth from the bottom. Spread Little Potatoes around meatloaf. Then serve!

Ingredients
For the potatoes:
- 1.5 pounds baby gold potatoes
- 1 cup chicken broth, or water
- 2 teaspoons minced garlic
- 4 Tablespoons ,salted butter sliced
- ½ cup shredded Parmesan cheese
- dried parsley optional
For the meatloaf:
- 1 pound lean ground beef 93% lean
- ¾ cup milk
- 1 large egg
- 3 slices bread cut up into small pieces
- 1 tablespoon Worcestershire sauce
- ½ tablespoon onion powder
- ½ teaspoon salt
- ½ teaspoon dry ground mustard
- ¼ teaspoon black pepper
- ⅛ teaspoon garlic powder
For the meatloaf glaze:
- ½ cup ketchup
- 1 Tablespoon balsamic vinegar optional
Instructions
- Spray the bottom of a 6-quart electric pressure cooker (Instant Pot) with nonstick cooking spray or wipe with a bit of butter. Add baby potatoes into the bottom of the insert.

Always check out your posts for new recipe ideas. Love it that you now include InstaPot recipes. Don’t have one yet, but a good friend in Indiana loves his XL pressure cooker. Uses it all the time. Loves it so much, he’s moving up to a bigger size and bringing me his 6 quart. Never was a fan of pressure cookers, but was used to the old ones that were more dangerous. Now really excited to see if I can convert from a crock pot lover to a pressure cooker lover. Love your posts (and your down to earth sassy style!)

If I cut this recipe in half to use in my 3 qt instant pot, how much do I adjust the cook time?
Made this tonight. Sautéed some celery and onions and added and cut back on the bread and milk. Added some brown sugar, dry mustard, worchestshire sauce and hot sauce to the topping. Yummy.

Hello Brandie just picked up the 3qt Ip and was wondering if I could use slow cooker liners in it as I’m a over the road driver and clean up would be so much easier if they could be used. Had a few slow cookers but their life span in the truck isn’t long. Any ideas or comments would be helpful. Thanks G.
Hey Glenn! I hear ya. It would make it too much easier but I don’t believe the liners are safe to use with the pressure cookers yet. A lot of people are hoping that Instant Pot will come up with disposable liners that will work specifically with electric pressure cookers. Hopefully soon!!
I tried doing the meatloaf and potatoes last night. I had never cooked potatoes to mash in chicken broth before OMG. They were the best! I have to say I used my own meatloaf recipe and cooked for 30 minutes. It was perfect. The potatoes I transferred to a bowl and mashed with cream and butter. The best ever! I know I seem to have changed everything, but I’m new to the IP and had no idea how to cook this meal. The book that came with it doesn’t tell you much of anything. Thank goodness for the internet.
I’m soooo bummed ! I didn’t see the note at the very end to add more time for instant pot brand. It’s only at 140 degrees Fahrenheit after 20 min. Did 3 more minutes and now only at 145 degrees Fahrenheit. Instant pot brand requires a LOT more time. The family has been waiting. Now I added 5 more minutes.

the note is for NON-Instant Pot brands. She uses an Instant Pot. Make sure the pressure valve is closed. 🙂 I did that a few times before I figured out what I was doing wrong.

Brandie, I just got my Instant Pot duo plus about a month ago and trying out different recipes. I am trying your meatloaf tonight. Wanted to let you know that you need to increase your broth or water by 1/2 cup because there is a minimum of 180 ml liquid that you should use in all the instant pots. I found this out doing some research on line. I guess they left it out or didn’t make it clear in our books that we get with our IP. Thanks for the recipe ????
Where do I find an insert like that
I have a question. Where does the grease from the meatloaf go? I normally take my meatloaf from the oven to drain the grease about halfway through cooking.
Hi Sue, that is why I suggest using a very lean meat for this. It doesn’t produce much grease and what little it does produce will be caught by the aluminum foil. 🙂
If I used a different type of potato like the sun lite brand do you adjust the cooking time?
Hello, thanks for the recipe! I’m going to try this on the weekend. Do you think I could use margarine instead of butter or would that screw it up? Also, does it matter what kind of milk? I’ve got some breadcrumbs I want to use up so I’m going to try subbing the 3 pieces of bread for 1 cup of breadcrumbs. Sorry for the questions – I’m new at meatloaf (i’m vegetarian but hubs isn’t LOL). Thanks!
Hi Joanna, I like actual slices of bread because they don’t taste “grainy” like bread crumbs (unless your using freshly made bread crumbs) but it will still work. Margarine should be fine. I always use 2% milk (if that helps) 🙂 Good luck!!
Everything came out great. Cooked for 30 minutes but I had almost two lbs of meat. Then I put it in the oven to put a crust on the glaze.
It is a learning process using this thing.

I have the Power Pressure Cooker XL. 20 minutes was not long enough for my meat loaf. After broiling I still had to put it back in the oven to finish cooking. I know the Instapot is slightly different so I had a feeling that the cooking time would vary.
I love this meatloaf and taters. But, I don’t have one of these pots. Can these both be cooked “normal” in the oven?
Could I do this in my Air fryer?

Hi Brandie! Just me & my hubby too! Have had my 6 qt instapot over a year & we usually have enough for 2 meals which is great because I get an extra night of not cooking ! Love my instapot! I quit cooking on my stove & using my oven. Love this recipe I add brown sugar to glaze & use my Mealthy broiler to brown
If I was to do this with medium sized red potatoes that were halved, do you think that would that work?

Just got one for Christmas! Mine is a 5 Quart Instant Pot. Will this recipe work in it? I worked up my courage and actually tried it out by making boiled eggs in it today, lol… Now I need something a little more courageous to try, and this recipe looks like it would be yummy!
Hi Kim! I hear ya! I have heard the Instant Pot is great for hard boiling eggs! A 5 quart should work, although I haven’t tried it. My understanding is you need plenty of room around the meatloaf and between the meatloaf and the lid for it all to cook properly. You may want to reduce the amount of potatoes you use to ensure even cooking. Let me know how it turns out for you!
Of course it will! You can adjust the recipes to make a bigger meatloaf and add more potatoes and baby carrots too if you are feeding more or want leftovers.
My pot is not an InstaPot brand, mine is a PressurePro. It did not come with a rack. Can you purchase those separately? or do you have an alternative for a rack?
Yes you can. I got a metal one from Amazon for $7.98. I also got a set of silicone “pans” from QVC (ON easy pay of course!) ,that is a 4 piece set of a dish/bowl,a steamer basket a lid and I forgot the other! The pieces are stackable in your pot. I got my son a 3 quart I FOR Christmas,he is planning on making the meatloaf and potatoes, and baby carrots today. He was really excited to get it when he saw how fast he could make pulled pork ! He’s getting a 6 quart one for his birthday no matter what ! Easier than me taking my 8 quart one when we go over for dinner!

I love my Instant Pot! I got one last Christmas with Bluetooth, meaning I can monitor and set cooking programs (i.e., going from high or low pressure to steam, for example). It’s also really cool to watch the temperature on the dashboard.
Thank you for this recipe. It’s funny you mention the 1 1/2 pound meatloaf recipes. Now that my sons are each eating so much food, we arranged to get our 1/2 cow’s ground beef packaged into 1.5 pound portions this year.

Oooooh, I haven’t seen the bluetooth ones. That’s neat! This recipe can easily be doubled too as long as you have an 8-quart instant pot. I’ve made this a few times and we really enjoy it. The potatoes like to stick a bit to the bottom a bit so I updated the recipe to either spray the bottom with nonstick cooking spray or wipe it with some butter. 🙂
I am brand new to the Instant Pot. I purchased the 8qt. If I double the meatloaf recipe, how much cooking time do you think I should add.
Hi Anna – that is a good question. I believe since you have an 8-quart IP and you are doubling the recipe, the cook time should be about the same. Let me know how it goes for you!
You do not add extra time to instant pot for doubling or frozen food. It takes longer to come up to pressure and then cooks in the time it says for recipe.

Ah! The old learning curve tends to bite us all. I burned a stew that was also uncooked on top because I forgot to close the vent before walking away. I only did that once! But I’ve used my IP many times successfully since that disaster. Thanks for this recipe! I’m putting it on my cold weather menu rotation. Wait, the IP doesn’t heat up the kitchen – it would be great in warm weather, too!
