Texas Breakfast Hash Brown Casserole (+Video)

This deliciously easy breakfast (or brunch) recipe for Texas Breakfast Hash Brown Casserole recipe is easy to make with lots of flavor!

A FLAVORFUL BREAKFAST CASSEROLE RECIPE

The casserole I am sharing today is so super flavorful. It has a delicious Tex Mex flavor and make for the perfect breakfast, brunch or even a side dish (for fajitas or tacos!) You can make this as spicy as your tastebuds prefer. Using a spicy sausage will kick it up some or even a dash of cayenne pepper. I like to serve this with a bit of salsa on the side.

TIPS FOR MAKING TEXAS BREAKFAST HASH BROWN CASSEROLE:

  • Hash brown casseroles freeze beautifully. Allow it to cool then cover with plastic wrap then aluminum foil to protect from freezer burn.
  • You can also freeze before baking. Prepare the casserole then cover and freeze before baking. You can then bake it from frozen but obviously you will have to add onto your cooking time since cooking from frozen.
  • This casserole can be prepared the day before. Cover then put in the refrigerator. Again, add a few minutes onto cooking time since baking from a cold state.
  • You can use frozen hash browns. Just thaw them first and pat dry with paper towels (so they don’t make your casserole runny from the excess moisture.)
  • To make this faster to prepare, try using the pre-cooked sausage crumbles (like Jimmy Dean).

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • refrigerated hash browns (like Simply Potatoes)
  • green pepper
  • red pepper
  • yellow pepper
  • sausage (cooked and crumbled)
  • shredded Mexican cheese
  • heavy cream
  • cumin
  • salt + pepper
  • cilantro (optional)

HOW TO MAKE TEXAS BREAKFAST HASH BROWN CASSEROLE:

Preheat oven to 350F degrees. Spray a 2-quart (or 8-inch square) casserole dish with nonstick cooking spray. In a large bowl, mix together hash browns, diced peppers, sausage, 1 cup shredded Mexican cheese, heavy cream, cumin, salt & pepper.

Pour hash brown mixture into prepared casserole dish. Top with remaining 1/4 cup shredded cheese.

Bake for 25-30 minutes, or until top is a golden brown.

Sprinkle on some cilantro (optional), and serve. Serve with diced tomato, avocado, or salsa as topping for some extra flavor.

Ingredients

  • 2 cups refrigerated hash browns
  • ¼ cup diced green pepper
  • ¼ cup diced red pepper
  • ¼ cup diced yellow pepper
  • ½ cup cooked and crumbled sausage
  • 1 ¼ cups shredded Mexican shredded cheese, divided use
  • ½ cup heavy cream
  • 2 teaspoons cumin (or taco seasoning for a bigger kick of flavor)
  • salt and pepper, to taste
  • cilantro (optional), for topping

Instructions

  • Preheat oven to 350F degrees. Spray a 2-quart (or 8-inch square) casserole dish with nonstick cooking spray

  1. They are harsh because they have to be baby stepped through a simple casserole recipe. People lack kindergarten cooking skills and common sense.

  3. I am anxious to try this recipe, I love hashbrowns too. BTW I see where the cream is added. It does show adding the cheese twice, but since there is only one kind of cheese I could figure that out on my own. Lol

  4. Why does the recipe show 1 cup Mexican cheese and then 1 1/4 cup Mexican cheese? Do you really use 2 1/4 cups of cheese?

    I keep a 3-ring binder with recipes that appear……but when they aren’t printable I just let them go. I don’t want to print all the ads in the recipe. PLEASE GIVE US A PRINTABLE VERSION – OR AM I JUST NOT SEEING IT?

  7. This sounds and looks yummy. And I assume that the heavy cream is added with all the other ingredients before putting it in the dish. lol I can’t wait to try this.

    Well there’s no mention about where the heavy cream goes in, I guess you just mix it in with all the rest before you bake it. You need to proof read your directions to make sure you have mentioned all the ingredients.
